#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Pyaj Kachori 

This is the delicacy from the state of Rajasthan especially from Jodhpur.

Very tasty and crispy snack s dish. 

These kachories are so tasty that there is no need of any accompaniment.

You should taste it when you are in Rajasthan or try this recipe at home.

Ingredients ...

For stuffing 

*Onion...2 big

*Boiled potato... 1 medium 

*Besan... 1 tablespoon 

*Oil for roasting stuffing... 2 tablespoon

*Kalaunji... 1/4 th teaspoon 

*Salt... 1.5 teaspoon 

*Sugar... 1/2 teaspoon 

*Chopped coriander... 2 tablespoon, 

*Oil for frying.


Grind the following ingredients from mixer in a fine powder without adding water.....

*Fennel seeds/saunf... 1 tablespoon 

*Coriander seeds... 1/2 tablespoon 

*Cumin seeds... 1/2 tablespoon 

*Red chilli powder... 1 tablespoon 

*Aamchur... Dry mango powder... 1 teaspoon 

*Black pepper corns.... 10

*Cloves... 2 

*Green chilly... 1

*Garlic pods... 2

*Asafoetida powder... 1/4 th teaspoon 


For outer covering...

*Maida... 1.5 Cup... measuring cup 

*Oil for dough... 3 tbspn 

*Water for dough... 3/4 th Cup 

*Salt... 3/4 th teaspoon 

*Ajwain... 1/4 th teaspoon 


Method...

*First make a dough. 

In a bowl add Maida, salt, ajwain and 2 tbspn oil. Mix it properly. 

*Add water gradually, make a dough. Slowly add all the water and keep kneading atleast for 10 minutes.

This will help to bring elasticity in flour dough.

Add remaining 1 tbspn oil, knead for a minute and cover with the lid. Let this dough rest for half an hour.

*Chopp the Onions. 

*Peel the potato and grate it finely.

*In a thick based pan, heat 2 tablespoon oil.

*Add kalonji , after 30 Seconds add besan roast on medium flame .

*Add grinded masala and keep roasting for 2-3 minutes. All this roasting will have to be done on low flame.

*After 2-3 minutes, add chopped onions and keep roasting for 3-4 minutes.

*Add grated boiled potato,add salt and sugar.

Mix properly. Once again roast all the masala for 3-4 minutes.

*Switch off the Gas add chopped coriander.

*Let this roasted masala cool completely.

*Divide the dough into 8 equal parts.

*Make the equal size ball of Onion masala.

*Flat the dough with the help of hands, place onion masala ball, cover with dough neatly from all the sides. Flatten this stuffed ball with the help your hands. 

*In this way prepare all the kachori.

*Heat a iron tawa on a low flame. Roast all the Kachori for 2 minutes from both the sides.

*In this way roast all the remaining Kachori.

*Now heat Oil in an wide iron kadhai.

*When Oil gets heated add 2-3 kachori at a time and deep fry on low flame till light brown from both the sides.

*Serve hot with fried green chillies...

*Enjoy.
