Lemon Rice

# Lemon Rice
This is a very tasty and yummy Rice preparation... Full of Carbohydrates and Proteins.
A nice tangy flavour of Lemon and Curry Leaves makes it more tasty.
Ingredients...
*Cooked rice ....2 cups
*Raw Peanuts n roasted Chickpeas  Dal... 1 tbspn each
*Grated Coconut...1 tbsp
*Oil... 1/2 tbsp
*Lemon juice...2 tsp
*Sugar...1/2 tsp
*Salt...1/2 tsp
*Dry Red Chillies... 3
*Termeric...1/4 tsp.
*Curry patta leaves...8 to10
*Mustard Seeds...1/8 tsp
*Asafoetida Powder...a pinch
Method. ..
*Soak Peanuts n  roasted Chickpeas dal in a water for 1 hour.
*If you are in hurry  do not soak it...fry in oil...but soaked one tastes better. 
*Heat Oil in a pan add Mustard Seeds,when it splutters..add Asafoetida Powder.. Curry Leaves, broken Dry Red Chillies, stir for a minute.
*Add soaked Peanuts , Chickpeas Dal and grated Coconut.
*Saute for 2 minutes..add Lemon juice, Sugar and Salt. 
*Mix properly. ..add cooked Rice mix...steam for 2..3 mts..
*Ready to serve. ..

Ingredients...
*Cashew ...1/2 Cup
*Almonds...1/2 Cup
*Sugar...1/2 Cup

*Ghee...1/4 tsp

Dosa prepared with  Vegetab natural
Colour...
These Dosa are soft and fluffy...

Ingredients...
*Raw Rice...3 Cups
*Udad/ Split BlackGram dal...1 Cup
*Fenugreek seeds...1 tsp
*Salt... 4 tsp
*Coconut Oil... for Roasting
Green Colour...
*Chopped Spinach...1/2 Cup
*Coriander...1 tbsp
*Rock Salt...a pinch
*Lemon juice...1/2 tsp
Red Colour...
*Beetroot cubed and steamed...1 tbspn
*Termeric...a pinch
*Fresh Tomato chopped..1 tbsp
Method...
*Wash and soak the Rice, Dal and Fenugreek seeds for 5..6 hours.
*Grind to a smooth paste.
*Let it ferment for 8 hours.
*In the morning add Salt mix thoroughly, add little water if necessary.
*Make a pulp of steamed Beetroot and Tomato in a mixer, add Termeric and let it cook for 2..3 minutes.
Keep it aside.
*Steam Spinach in a pan without adding water, it will release water intially..cook till water evaporates.
Grind from Mixer cooked Spinach, Coriander, Lemon juice and Rock Salt.

Very healthy and can  be prepared  for daily Meals as well as when you are having guests.
Ingredients...
*Basmati Rice...1 Cup
*Oil...5 tbspn
*Potato diced...1 Cup
*Onion Julien...1 Cup
*Cashew nuts...7..8
*Garlic 3 & grated Ginger 1 tsp...grind it coarsely.
*Home made Garam Masala...1/2 tsp
*Salt...1 TSP
Green Colour...
*Chopped Spinach...1/2 Cup
*Coriander...1 tbsp
*Rock Salt...a pinch
*Lemon juice...1/2 tsp
Red Colour...
*Beetroot cubed and steamed...1 tbspn
*Termeric...a pinch
*Fresh Tomato chopped..1 tbsp
Method...
*Wash and Cook Rice by adding 2 cups of water on high flame in a pressure cooker for 1 flame.
*When cool, spread in a plate carefully, each grain should be separate.
*Make a pulp of steamed Beetroot and Tomato in a mixer, add Termeric and let it cook for 2..3 minutes.

This is a very tempting and quick chutney prepared in our house every winter.
Very tasty n full of flavour...
Tastes better when consumed fresh...
Ingredients...
*Medium sized Tomatoes... 4
*Spicy Green Chillies...5..6
*Garlic pods ...5..6
*Chopped Coriander...1 tbspn
*Salt...1/2 tsp
Method...
*Roast Tomato, Chillies n Garlic pods on the flame.
*You may peel the rosted tomotoes. ..but i want to keep the nutrients and smokey flavur so not peeled it.
*Grind it roughly in the stone by adding Salt n Coriander. ..
*You can grind it in Mixer too.
*It should not  be in the paste form..rough texture gives better taste...
*It taste amazingly Yummmm 😋. ...

This Yummmm 😋 and tangy Recipe is of my friend Vinaya Prabhu .
Very easy to prepare and tasty to eat...
Every one in our family liked it...
Brinjals are from our kitchen garden...
Ingredients...
*Baby Brinjals...10
*Chopped Onion...2 Cups
*Chopped Tomatoes...2 Cups
*Coconut Oil...5 tbspn
*Red Chilli Powder... 2 tsp
*Coriander seeds Powder...2 tsp
*Salt...1.5 tsp
*Termeric...a pinch
*Coriander seeds Powder... 2 tsp
*Water... 2 Cups
Method...
*Wash and slit the Brinjals keeping stems intact. I have used green Brinjal... they are more tasty 😋
*Heat Oil in a  pan, add chopped Onions and Brinjals, also add a pinch of salt.
*Saute  on medium flame till Onions are brown.
*Add Red Chilli Powder n chopped Tomatoes.
*Saute for 2 minutes, add Coriander Seeds Powder n remaining Salt.
*Saute for a minute, add 2 Cups water.
*Cook till Brinjals are soft.
Done...
*Serve hot with Roti or Dal Rice.

 This is no Onion Garlic preparation. Preperation...

Ingredients...
*Semolina...1 Cup 1 Cup....200 ml
*Sweet Corn kernel...3/4 th Cup
*Sour Curd...1/2 Cup
*Oil...4 tbspn *Green Chillies...4
*Turmeric powder ...1/2 tsp
*Curry leaves...8
*Salt...1 tsp
*Udad/Split BlackGram...2 tsp
*Mustard and Cumin seeds...1/4 tsp each
*Asafoetida powder...1/4 the TSP
Method...
*Heat Oil in a Kadhai, add Mustard n Cumin Seeds, let it splutter, add Udad dal, saute till pink in colour,add Asafoetida. Mix properly.
*Add Green Chillies, Curry Leaves,
& Semolina. Roast for five minutes on low flame.
* Add Turmeric Powder, Sweetcorn and Roast for Two minutes.

Ingredients...
*Raw Rice...1 Cup
*Fresh Red Tomatoes...5..6
*Onion...1
*Garlic cloves..4
*Ginger grated...1 TSP
*Green Chillies...3
*Green Peas...1 Cup
*Oil...1.5 tbspn
*Red Chilli Powder...1 TSP
*Salt... 1 TSP
*Home made Garam Masala...1/4 tsp
*Termeric...a pinch
*Sugar...a pinch
Method...
*Wash n Cook Rice such that each grain is separate.
*Chop Tomatoes, make a paste from mixer without adding water, this should measure 2 Cups.
*Make paste of Chilli, Garlic and Ginger without adding water.
*Chop the Onion.
*Heat Oil in a pan, add chopped Onions, saute till soft.
*Add Ginger ...Garlic... Chilli paste, saute for 2 minutes.
*Add Termeric Powder, Red Chilli Powder, Salt n Green Peas.
*Saute again for 2 minutes, add Tomato puree.

This simple but Yummmm Breakfast is the signature dish of Vidarbha region.
When new crop of Rice arrives in the market, this dish is prepared.
This dish is called as "आयते"...
By using lot's of green Garlic this is prepared. Green Garlic is the Hero of
this Dish...
Every household has their unique Recipe of preparing this..

Ingredients...
* Raw Rice ...1cup
*Fresh Green Garlic chopped...1/2 Cup
*Green Chillies..3..4
*Grated Ginger...1 tsp
*Chopped Coriander...1/4 cup
*Salt...1 tsp
*Oil ...1 tbsp
*Water...2 Cups
Method...
*Wash and soak the Rice for 3 hours.
*Drain the water from soaked Rice.
*Mix all the ingredients except Oil and Water.
*Grind to a smooth paste using minimum water.
*Pour the mixture in a pot, add remaining Water..we have to use 2 Cups of water including used in grinding.
*Heat the Iron Tawa for 3 minutes on medium flame, spread the Oil and let it heat.

With the beginning of new calendar Year from January...every household starts the Preperations for Tilgud i.e. sweet made from Jaggery n Seasame seeds...
In Maharashtra there is a tradition of preparing Tilgul laddo n Tilgul poli..

This is the Quick version of Tilgul Poli...
Let's see the Recipie...
Ingredients...
*Already prepared Phulka....6
*Roasted Seasame seeds... 1 tbsp
*Chopped Jaggery....1/2 Cup
*Homemade Ghee...2 tbsp
Method...
*Melt the Ghee
*Heat Iron Tawa, coat Phulka with melted Ghee n roast on high flame by pressing it with the help of spatula on both the sides till crispy n light Pink in colour.
*Keep it aside.
*In a pan add 3 tsp Ghee, add Jaggery, keep stirring on low flame till jaggery  is soft. Switch off the gas.
*Add 1 tsp Milk in the Jaggery mix, stir continuously. Our Jaggery syrup is ready.
*Coat  Jaggery syrup on each Roti by spreading with the help of spoon.

    This is a very crunchy n tasty chutney...
A nice accompaniment in regular meals. I like to eat this Chutney with Roti or Jawar/ Bajra Bhakari...as my meal.
Ingrediants. ..
*Peels of 500 gms Ridge Gourd. ..
*Oil 1 tbsp. ..7..8
*Green chillies. ..7 to 8
*Mustard Seeds...1/2 tsp
*Cumin Seeds...1/4 tsp
*Asafoetida Powder.... 1/4 tsp
*Salt... 1/2 tsp
*Red Chilli Powder... 1 tsp
*Roasted Seasame seeds... 1 tbsp
*Roasted Groundnut Powder...1 tbsp
Method...
*Wash Ridge Gourd. .. Peel off only ridges with light hand with the help of peeler....we are not using ridges....throw it away...now grate the peel with light hand on the grater.
*Heat the oil in the iron kadhai...add Mustard n Cumin Seeds....when it splutters add Asafoetida Powder and chopped Green Chillies.
*Saute on low flame for 3..4 mts..add Ridge Gourd peels n saute  on low flame stirring occasionally... till they change colour or become crispy..

   One of the favourite Raita in our house.
When it is prepared from fresh Pineapple... when mixed with Curd it tastes bitter...I don't want to use tinned Vegetable and Fruits...
So after doing lots of experiments I got this fail proof Recipie.
You just try it ...very tasty n Yummmm 😋
Ingrediants. ..
*Chopped fresh Pineapple chunks...  2 cups.
*Thick home made Curd... 2 cups
*Sugar ...6 tsps
*Salt ...1/4 tsp.
*Pomegranate Seeds... 1/2 Cup *Coriander for Garnish
Method...
*In a pan mix pineapple chunks n 5 tsp sugar....cook stirring continuously till sugar dissolves n absorbed by Pineapple.
*Quantity of sugar may vary as per taste.
*Let pineapple chunks cool...
*Beat curd...add  remaining Sugar
and Salt,Pineapple chunks n   Pomegranate Seeds.
*Mix all well.
*Garnish with coriander leaves.
