All in one... Carbohydrates Proteins and green Vegie as well as Spices.

Ingredients...
*Raw Rice... 1 Cup
*Moong Dal/ split Greengram... 1/2  Cup
*Oil... 4 tbspn
*Spinach washed and chopped... 3 Cups
*Salt... 1.5 tsp
*Red Chili Powder... 1/2 tsp
*Turmeric powder... 1/4 tsp
*Grated Ginger... 1 tsp
*Garlic cloves... 3... chopped
*Goda Masala... 1 tsp... Optional
Method...
*Wash Rice & Moong Dal properly.
Keep it aside.
*Steam Spinach in a Pan without adding water. When it cools grind from the Mixer without adding water.
*Heat Oil in the Pressure Cooker, add Mustard & Cumin Seeds, after it splutters add Turmeric Powder, Grated Ginger, chopped Garlic. *Saute , and add Spinach, once again saute for 5 minutes.

 * हिंग पावडर ... 1/4 टीस्पून
 * लिंबाचा रस ... 4 टीस्पून
 * साखर ... 3 टीस्पून
 फालसाठी ...
 * गव्हाचे पीठ ... 1 वाटी
 * तेल ... 3 टीस्पून
 * मीठ ... 3/4 टीस्पून
 * लाल तिखट ... 1/2 टीस्पून

 * तुरीची डाळ स्वच्छ धुऊन  30 मिनिटे पाण्यात भिजवून ठेवा.  30 मिनिटानंतर, 3 वाटी पाणी आणि हळद घालून शिजवा. हाय गॅस वर  10 मिनिटे व मंद गॅसवर 10 मिनिटे शिजवा.

Ingredients...
For Dal
*Split Pigeon/Arhar/Tuar Dal...1 Cup
*Salt...1.5 tsp
*Green Chillies...4... chopped
*Oil...4 tbspn
*Mustard Seeds... 1/4 tsp
*Asafoetida Powder... 1/4 tsp
*Lemon juice... 4 tsp
*Sugar... 3 tsp
For Phal...
*Wheat flour... 1 Cup
*Oil... 3 tsp
*Salt... 3/4 tsp
*Red Chilli Powder... 1/2 tsp
*Turmeric powder... 1/4 tsp
*Cumin seeds... 1/4 tsp
*Ajwain... 1/4 tsp
For Serving...
*Finely chopped Onion...1 Cup
*Finely chopped Tomatoes... 1/2 Cup
*Finely chopped Coriander... 1/4 Cup
Method...
*Wash and Soak the Tuar Dal for 30 minutes. After 30 minutes, pressure cook it by adding 3 Cups Water & Turmeric. Place the Gas on high flame for 10 minutes, and on low flame for 10 minutes.

 In Winter we prepare various dishes made from Carrots
Carrot Halwa, Carrot Salad ,we use it in different Vegetable combinations as well as in different Rice preparations,  Pulao, Upma etc.
Carrots is the good source of Vitamin A.
Today I have prepared Carrot Chutney which is very tasty and goes very well with Idli, Dosa, Sandwiches and in your regular meals.
Ingredients...
*Diced Carrots... 1 Cup
*Diced Raw Mango ...1/4 cup
*Roasted Chana Dal ...1 tbspn
*Red Chilli Powder...2 tsp 
*Salt...3/4 tsp
*Sugar..1 tsp
*Water...1/2 Cup
For Tempering...
*Oil...3 tsp
*Mustard Seeds...1/4 tsp
*Curry leaves...5
Method.
*Mix all the ingredients.
*Grind it from the mixer, without adding water. Then add 1/2 Cup water.
*Adjust water as per your requirement.
*Heat Oil in a Kadhai, add Mustard Seeds, after it splutters switch off the gas.
* Add Curry leaves, immediately pour over the Chutney. Mix properly.
*Serve with Idli, Dosa, Sandwiches and regular meals.

This is a protein rich tasty preparation, which can be prepared within  minutes. Basic ingredient used is Chickpea flour or Besan.
This dish is prepared in every house hold & is prepared with different ingredients. And each preperation tastes Yum 😋😋😍
Today I have prepared Tomato Pithle...टमाट्या चे पिठले.
Where Tomatoes are used , along with other spices and herbs.
Very tasty and healthy 😍

Ingredients...
*Chickpea flour...1 Cup
*Water...3 Cups
*Tomato chopped... 2 Cups
*Oil...3 tbspn
*Green Chillies... 4
*Coriander chopped...1 tbspn
*Turmeric...1/2 tsp
*Red Chilli Powder...1 tsp
*Salt...1 tsp
*Mustard Seeds...1/2 tsp
*Asafoetida Powder...1/4 tsp
Method...
*Mix Chickpea flour n 2 Cups Water slowly without forming lumps. You can use whisker.

विदर्भात चंद्रपूर जिल्ह्या ला लागुनच आंध्र प्रदेशाची सीमा आहे... त्यामुळे तेलगु जेवण शैली चा प्रभाव येथील आहारामध्ये आहे.
घरी काही मोठं कार्य असेल तर जे स्वयंपाक करायला तेलंगणा भागातील स्वयंपाकी  येतात त्यांना "अय्या" असे म्हटले जाते...
तर उत्तरेकडील स्वयंपाकी असतील तर "महाराज" किंवा "पंडित जी"...
चित्रान्ना भात किंवा रावण भात हा लहान पणापासून खात आलो आहे. अतिशय चवदार लागणारा हा भात गार च खाल्ला जातो व अतिशय अप्रतिम लागतो.
हा भात विशेष करून उन्हाळ्यात कैरी घालून करतात... एरवी वर्षभर पण लिंबू रस केला जातो...
अन्ना म्हणजे भात...
हा भात सकाळी करून संध्याकाळी खाल्ला तर सगळे मसाले मुरल्यामुळे जास्त चविष्ट लागतो.

This Masala Brinjal is vary Tasty 😋😋😋😋
Masala is simple, made from easily available ingredients in the home.
No grinding & Pre Preperations are required.
Very healthy to prepare in Summer.
Since dry Veg Preperation...easy to carry in Tiffins too...
Ingredients...
*Green Small Brinjals.. 250  gms
*Chopped Coriander... 1/2 Cup
*Onion... finely chopped...1.5 Cup
*Coriander Powder..2 tbspn
*Dry Coconut grated...2 tbspn
*Roasted Ground Nut Powder...1 tbspn
*Red Chilly Powder... 2 tsp
*Raw Mango /Aamchur Powder ...1 tsp
*Salt ...1 tsp
*Sugar... 1/2 ts
*Oil ... 1/2 Cup...100 ml
Method...
*Slit cross the Brinjals keeping the bottom intact.
*Mix all the ingredients except Oil. *Stuff them in Brijals...keep the left over masala aside...
*Heat the Oil in an lron kadhai, add 1/4 tsp Turmeric Powder, place the Brinjals carefully .
*Cook them on low flame for 3..4..minutes stirring occasionally.

Very crispy n paper thin Dosa when served with  Chutney makes a complete Meal 👍😋
With the same batter you can prepare soft and fluffy Dosa too...
Full of Carbohydrates n Proteins.
Ingredients...
*Raw Rice...1 Cup
*Udad/ Split BlackGram dal...1/4 Cup
*Cheakpea / Chana Dal...1/4 Cup *Arhar/Toor dal... 1/4 Cup
*Moong Dal... 1/4  Cup
*Fenugreek seeds...1/2 tsp
*Salt... 2 tsp
*Coconut Oil... for Roasting
Method...
*Wash and soak the Rice, Dal and Fenugreek seeds for 5..6 hours.
*Grind to a smooth paste.
*Let it ferment for 8 hours.
*In the morning add Salt mix thoroughly, add little water if necessary.
*Dry heat the Iron Tawa for five minutes, spread one teaspoon Oil n let it heat for 2..3 minutes. Now Tawa is ready for cooking.
*Spread 1 tablespoon batter evenly, it should be thin, drizzle Oil from all the sides, let it crispy by one side
 flip and cook another side.
*In this way prepare  all the Dosa
*Serve  hot with  Potato Masala, Sambhar n Coconut Chutney…

Sweet... Sour .. Spicy...full of flavours....
Goes very well in Regular Meals as well as with Dosa, Idli, Vada, Sandwich....etc.
Very quick to prepare with all easily available ingredients in home.
Ingredients
*Raw Mango...Diced...1 Cup 1 Cup...200ml
*Dry Coconut... grated...1/2 Cup
*Peanuts... roasted...1/2 Cup
*Red Chilli Powder....3 tsp
*Salt...1 tsp
*Cumin seeds...1/2 tsp
*Jaggery... grated...1/4 Cup
For Tempering...
*Oil...3 tsp
*Mustard Seeds...1/4 tsp
*Asafoetida Powder...1/4 tsp
Method...
*Mix all ingredients except Tempering ingredients.
*Grind from mixer without adding water.
*Put in a bowl.
*Heat Oil in a Pan, add Mustard Seeds, let it splutter. Switch off the Gas. Add Asafoetida Powder, pour over the Chutney.
*Mix properly.
*Refridgerate for more shelf life.

Ingredients....
*Bhindi...500 grams
*Udad Dal...1 tsp
*Dry Coconut grated... 3 tsp
*Groundnut.... 2 tsp
*Cumin seeds.... 1 tsp
*Coriander Seeds...2 tsp
*Turmeric powder... 1/2 tsp
*Red Chilli Powder... 1.5 tsp
*Garlic cloves... 4
*Salt... 1 tsp
*Oil.... 5 tbspn
*Mustard Seeds... 1/4 tsp
Method...
*Wash and dry the Bhindi,
Slice them to medium thickness.
*Dry roast Cumin Seeds, Coriander Seeds, Groundnuts, Grated Coconut,  & Udad Dal seperately.
*Let it cool , mix and add Garlic cloves, grind from the Mixer without adding water to a fine Powder.
*Heat Oil in an Iron kadhai, add Mustard Seeds, after it splutters add chopped Bhindi. Mix properly.
*Add Turmeric Powder, Red Chilli Powder and Salt. Mix properly.
