Carrot Radish Pickle
We can prepare and eat  vegetable preparations in different ways
Today I have prepared this Tangy Carrot Radish pickle.
Very easy to prepare and tasty too...😋😋😋
For longer shelf life keep it in refrigerator ...
Ingredients
*Peeled and thin long slices of Carrot...1 cup
Peeled and thin long slices of Radish... 1/2 Cup
*Oil...3 tbspn
*Mustard Seeds... 1 tsp
*Red Chilli Powder... 1 tsp
*Salt... 1/2 tsp
*Turmeric Powder...1/4 tsp
*Asafoetida Powder... 1/4 tsp
*Fenugreek Seeds Powder...1/4 tsp
*Lemon juice...3 tsp
Method
*Grind Mustard Seeds on Chopping board with the help of a Rolling Pin.
*Mix Carrot, Radish, Lemon Juice, Salt and Mustard Seeds Powder.
*Heat Oil in a small kadhai, add Asafoetida Powder, Turmeric Powder and Fenugreek seeds Powder. Switch off the Gas.
*When the Oil is little warm add Red Chilli Powder and Mix properly with Carrot Radish pieces.
* You can eat it after 30 minutes.
*Refridgerate for longer shelf life.
Note... Grind 1/2 Cup dry Fenugreek seeds from the Mixer finely, store in a glass jar, add a Pinch full in Leafy vegetables as well as Pulses. Tastes Yummmm.

गाजर मुळा लोणचे
हिवाळ्यात बाजारात भरपूर प्रमाणात ताज्या रसरशीत भाज्या मिळतात.
मग काय भरपूर भाजी, कोशिंबीरी.... विविध प्रकारे बनवून खाण्याचे सुख समाधान अनुभवायचे...
आज असेच मस्तपैकी चरचरीत व झटपट होणारे गाजर मुळ्याचे लोणचे केले आहे😋😋😋
अगदी घरीच असणाऱ्या साहित्यापासून... त्यामुळे मोहरीची डाळ नाही कसे करू अशी चिंता करू नका.
फ्रिजमध्ये ठेवल्यास तीन-चार दिवस छान राहते.
साहित्य....
*गाजर सोलून पातळ उभे तुकडे...1 वाटी
*मुळा सोलुन पातळ उभे तुकडे...1/2 वाटी
*तेल...3 टेबलस्पून
*मेथी पुड...1/4 टिस्पून
*हिंग पुड...1/4 टिस्पून
*हळद...1/4 टिस्पून
*तिखट... 1 टिस्पून
*लिंबू रस...3 टिस्पून
*मीठ...1/2 टिस्पून
*मोहरी...1 टिस्पून
कृती...
*मोहरी पोळपाटाव जेर किंवा चाॅपिंग बोर्ड वर ठेवून लाटण्याने भरडुन घ्या.
*गाजर, मुळ्याचे तुकडे, लिंबू रस, भरडलेली मोहरी व मीठ एकत्र करून घ्या.
*एका छोट्या कढईत तेल तापवून, त्यात हिंग पुड, मेथी पुड , व हळद घालावी. गॅस बंद करा.
*तेल थोडे कोमट झाल्यावर लाल तिखट घालून फोडणी गाजर मुळ्याच्या कापांवर घालून छान एकत्र करा.
*अर्ध्या तासाने खाऊ शकतो.
*फ्रीजमध्ये ठेवावे.
टीप.... मेथीपूड साठी अर्धी वाटी मेथीदाणा मिक्सर मधून बारीक दळून एका काचेच्या बाटलीत भरून ठेवावे बरेच दिवस टिकते व कुठलीही भाजी आणि उसळ यांच्या फोडणीत सुद्धा चिमूटभर टाकल्यास उत्तम चव येते.
