Lemon Rice
This simple but tasty Rice preparation, when sevrd with Raita turns into a complete Meal.
Very flavourful, rich in Protein...tangy....ЁЯШЛЁЯШЛЁЯШЛ
Ingredients...
*Raw Rice ....1 Cup
*Peanuts...1/2 Cup
*Cashew Nuts...10
*Lemon juice...1 tbsp
*Roasted split Chickpea....2 tsp
*Split Blackgram/Udid Dal...2 tsp
*Green Chillies...4...cut into2 parts
*Dry Red Chillies...4 broken
*Grated Ginger...1 tsp
*Turmeric Powder...1/4 tsp
*Asafoetida Powder...1/4 tsp
*Curry leaves...25
*Salt...1 tsp
*Oil...4 tbspn
*Mustard Seeds...1/4 tsp
Method...
*Cook Rice in such a way that every grain is seperate. Let it cool completely.
*Saute Groundnuts in one 2 tsp Oil on low flame till crisp. Keep it aside.
Saute Cashew Nuts in the same Oil till golden brown.
*Heat Oil in a Pan, add Mustard Seeds, after it splutters add Udad Dal, saute till Pink in colour. Add roasted Chana Dal, saute for a minute.
*Add Asafoetida Powder, Turmeric Powder, Grated Ginger, Green Chillies, Red Chillies...mix properly.
Saute for 2 minutes.
*Add Salt, Lemon Juice n Cooked Rice. Mix properly. Cover with the lid , for 3 minutes.
*Mix properly, once again saute for 2 minutes .
*Mix already sauted Peanuts & Cashew Nuts at the end to keep crunchy.
*Done.
* Serve with any Curd based Raita.
*Here I have served with Carrot...Onion.. Pomegranate seeds Raita.
