#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. These Dosa are soft and fluffy...

Ingredients...
*Raw Rice...3 Cups
*Udad/ Split BlackGram dal...1 Cup
*Fenugreek seeds...1 tsp
*Salt... 4 tsp
*Coconut Oil... for Roasting
Green Colour...
*Chopped Spinach...1/2 Cup
*Coriander...1 tbsp
*Rock Salt...a pinch
*Lemon juice...1/2 tsp
Red Colour...
*Beetroot cubed and steamed...1 tbspn
*Termeric...a pinch
*Fresh Tomato chopped..1 tbsp
Method...
*Wash and soak the Rice, Dal and Fenugreek seeds for 5..6 hours.
*Grind to a smooth paste.
*Let it ferment for 8 hours.
*In the morning add Salt mix thoroughly, add little water if necessary.
*Make a pulp of steamed Beetroot and Tomato in a mixer, add Termeric and let it cook for 2..3 minutes.
Keep it aside.
*Steam Spinach in a pan without adding water, it will release water intially..cook till water evaporates.
Grind from Mixer cooked Spinach, Coriander, Lemon juice and Rock Salt.
* Make three portions of fermented Dosa batter. Mix Green Colour in one, Red colour in another and keep one portion White only.
*Dry heat the Iron Tawa for five minutes, spread one teaspoon Oil n let it heat for 2..3 minutes. Now Tawa is ready for cooking.
*Spread 2 tablespoon batter evenly, it should be thick, drizzle Oil from all the sides, cover with the lid for 2 minutes.
*Remove the lid flip and cook another side.
*In this way prepare Dosa of all the three colours.
*Serve  hot with Coconut Chutney.

भाज्यांचे नैसर्गिक रंग वापरून केलेला म‌उ दोसा खुप सुंदर दिसतो व  छान लागतो...
लोखंडी तवा वापरून हि पटकन होणारा...
तिरंगी दोसा...
साहित्य...
*जाड तांदुळ..3 वाटी
*उडीद डाळ...1 वाटी
*मेथीदाणा...1 tsp
*मीठ.... 4 tsp
*खोबरेल तेल...1/2 वाटी
हिरवा रंग...
*पालक स्वच्छ धुऊन व चिरुन.. अर्धी वाटी *कोथिंबीर चिरून.. एक टेबलस्पून
*काळे मीठ ..एक चिमूट
*लिंबूरस.. 1/2 टिस्पून
लाल रंग...
*बिटरूट चिरून व वाफवून... 1 टेबलस्पून
*चिरलेले टमाटे... एक टेबल स्पून
*हळद... एक चिमूट
कृती....
*तांदुळ, डाळ स्वछ धुवून व मेथीदाणे घालुन 4..5 तास भिजवा.
*मिक्सर मध्ये बारीक वाटून घ्या, फार पातळ वाटु नका.
*रात्रभर आंबवुन घ्या.
*सकाळी त्यात मीठ घालून, मिक्स करा, गरज वाटली तर 1 वाटी पाणी घालून पातळ करा.
*पालक पाणी न घालता गॅसवर शिजायला ठेवा सुरुवातीला थोडे पाणी सुटेल, पाणी आटेपर्यंत शिजवून घ्या. पालक, कोथिंबीर, काळे मिठ व लिंबूरस मिक्सरमधून वाटून घ्या.
*बिटरूट, टमाटे व हळद मिक्सरमध्ये वाटून घ्या. गॅसवर दोन तीन मिनिटे शिजवून घ्या.
*दोस्या च्या पिठाचे तीन भाग करून एका भागात हिरवा, दुसऱ्या भागात लाल रंग घालून घ्या. व तिसरा भाग पांढरा ठेवा.
*गॅसवर स्वच्छ घासलेला लोखंडी तवा 5 मिनिटे तापवत ठेवा.
*गॅस कमी करून , त्यावर 2 tsp तेल पसरवून अजून 3 मिनिटे तापवा.
*आपला तवा दोसे करायला सिद्ध झाला.
*तवा मंद गॅसवर करा, 2..3 थेंब तेल घालून पसरवा, 2 मोठे चमचे भरून पीठ घाला, *झटपट गोल पसरवा.
खुप पातळ नको, जाडसर ठेवा.
बाजूने 2 tsp तेल गोलाकार घाला, दोस्यावर पण 1/2 tsp तेल पसरवा.
*2 मिनिटे झाकण ठेवा, झाकण काढुन सराट्याने हलकेच सोडवून घ्या.
*दुसऱ्या बाजूने 1/2 tsp तेल सोडून 1 मिनिटं ठेवा.
*अशाप्रकारे तीनही रंगाच्या पिठाचे दोसे करून घ्या.
*नारळाच्या चटणीसोबत गरम गरम दोसा सर्व्ह करा.
