In some areas this veg is also called as "गुनगुण्याची भाजी" Ingredients  1 Cup...150 ml *Patur Veg... finely chopped...3 cups *Yellow moong dal... 1/2 Cup  *Garlic pods... 6 *Oil... 4 tbspn  *Mustard seeds... 1/2 tsp  *Turmeric powder... 1/2 tsp *Red chilli powder... 1/2 tsp  *Salt... 1/2 tsp  *Lemon juice... 1 tsp  *Chopped coriander... 1 tbspn  *Grated coconut... 1 tbspn  Method... *Wash and soak yellow moong dal in sufficient water for 2 hours. *Here I have taken 2 bundle s of Patur Veg. Clean and take leaves only. Wash it thoroughly and chop finely.

   In winter this dish is prepared at least once in every household. ..
   When ever special guests are coming in winter this will be prepared along with Shrikhand as a  sweet dish....
   In winter this will be the part of any wedding or social functions menu...
   Main Ingrediant is Coriander. ..

Ingrediants. ...
1cup...150 ml
For Stuffing
*Coriander...clean... wash, dry and then finely chopped.... 4 cups
*Onions...2 medium 
*Ginger. ..2 tsp
*Garlic. ..7..8pods
*Green chillies. ..10
*Poppy seeds/ Khuskhus..1tablespoon
*Kismis/Raisins. ... 1 tablespoon
*Charoli seeds.. 1 tablespoon
*Grated coconut. ..dry one.. 1 cups
*Oil...4 tbspn
*Turmeric powder...1/2 tsp
*Red Chilli Powder...2 tsp
*Salt...2 tsp
*Goda Masala...2 tsp
This is home made, you can use store bought.
For Dough
*Wheat flour or All Purpose Flour ..1 cup
*Chickpea flour /Besan...2 cups
*Oil... 4 tsp for adding in dough
*Turmeric powder..1/2 tsp
*Salt..1 tsp
*Red Chilli Powder..1tsp
*Oil ...for frying
Method. ..
*Clean n Wash  Coriander ...let it dry n chopp finely.
*Make a dough of wheat flour, Chickpea flour , 4 tsp oil, 1/2 tsp Turmeric Powder,1 tsp Salt, 1 tsp Red Chilli powder,dough should be like Poori aata or more tighter than that.
*Chopp  finely onion...make a paste of Ginger,  Garlic n Green Chillies in the mixer without adding water.
*Heat a pan add  Oil. .add Poppy seeds n Onion..saute..add Chiily_ Garlic _Ginger pest. ..
*Saute on low flame...add 1/2 tsp Turmeric, 2 tsp Red Chilli powder, 2 tsp  Goda Masala, 2tsp Salt....saute till oil leaves the sides.
*Let it cool. ..mix grated coconut. ..charoli/ Hamilton's Mombin seeds, Kismis/Raisins & chopped Coriander.
*Mix properly. .
*Make 16 portions of the dough. ..roll out the pooris. ..put 2 tbsps of coriander mixture. ..fold two sides in  lengthwise first ,then seal properly  both bottom sides like envelope. ..Prepare all Vadi similarly.
*Heat oil in the pan. ..fry on medium heat. ..till golden brown.
    It will leave your house full of aroma...

हिवाळ्यामध्ये प्रत्येक घरी पुडाची वडी एकदा तरी बनवतातच...
कोणी पाहुणे येणार असतील तर पुडाची वडी ही हमखास बनवली जाते, पुडाची वडी व श्रीखंड हा एक लोकप्रिय मेनू आहे.
 हिवाळ्यात जर घरी लग्नकार्य केव्हा एखादे कार्य असेल तर पुडाची वडी ही हमखास मेनू मध्ये असते.
यातील मुख्य पदार्थ हा हिरवागार ताजा कोथिंबीर असतो.
साहित्य ...
सारणासाठी...
1 वाटी...150 मिली
*ताजा कोथिंबीर... स्वच्छ निवडून, धुवून थोडा सुकवून मग बारीक चिरून घ्यावा. 4 वाटी
*कांदे ...2 मध्यम 
*आले कीस....2 टीस्पून
*लसूण पाकळ्या ...7..8
* हिरव्या मिरच्या... 10
*गोडा मसाला ...2 टी स्पून
*खसखस ...1 टेबल स्पून
*हळद ...1/2 टिस्पून
*तिखट ...2 टीस्पून
*मीठ ... 2 टीस्पून
*सुके खोबरे कीस... 1 वाटी
*मनुका किंवा किसमिस.. 1टेबल स्पून 
*चारोळी....1 टेबलस्पून
*तेल ...4 टेबलस्पून
वरील आवरणासाठी साहित्य ....
*कणीक किंवा मैदा... 1 वाटी
*बेसन ...2 वाटी
* हळद ...1/2 टी स्पून
* तिखट ...1 टीस्पून
* मीठ ...1 टीस्पून
*तेल मोहनासाठी ...4 टीस्पून
*तळण्यासाठी तेल
कृती...
*कोथिंबीर निवडून, स्वच्छ धुवून घ्या ,त्याला एका कपड्यावर पसरून सुकवून घ्या पूर्ण कोरडा झाला की बारीक चिरून घ्या.
*मैदा किंवा कणीक ,बेसन ,मीठ, हळद व तिखट आणि मोहनाचे तेल घालून घट्ट गोळा भिजवून घ्यावा .पुरीच्या कणकेसारखा गोळा असावा , फार सैल भिजवू नका, त्याला एका बाजूला झाकून ठेवून द्या.
*कांदा बारीक चिरून घ्या आले लसूण व मिरचीची मिक्सर मधून पाणी न घालता पेस्ट करून घ्या .
*एका कढईत तेल तापवून त्यात खसखस घाला ,मग कांदा , व आले-लसूण-हिरवी मिरची पेस्ट घालून खमंग लाल होईपर्यंत परतून घ्या.
*नंतर कांद्याच्या मिश्रणात हळद, तिखट ,मीठ व गोडा मसाला घालून बाजूने तेल सुटेपर्यंत परतून घ्या.
*हे मिश्रण गार होऊ द्या ,नंतर त्यात खोबर्‍याचा किस ,चारोळी , किसमिस व चिरलेली कोथिंबीर घालून छान पैकी एकत्र करून घ्या.
*भिजवलेल्या कणकेचे 16 छोटे गोळे करून घ्या ,प्रत्येक गोळ्याची पुरी लाटून त्यावर वरील कोथिंबीरीचे दोन टेबलस्पून मिश्रण घाला, प्रथम लांबीत दोन्ही बाजूने फोल्ड करा, एकमेकांवर येईल अशाप्रकारे नंतर खालील दोन बाजू पण फोल्ड करून वडी चारी दिशांनी पक्की बंद करून घ्या.
*पारंपारिक पद्धतीत पुरी लाटून त्यावर तेल आणि गोड्या मसाल्याचे मिश्रण पसरवले जाते, पण मी वेळ वाचवण्यासाठी गोडा मसाला कोथिंबीरीच्या मिश्रणातच घालते, चवीला अजिबात फरक येत नाही.
*अशा प्रकारे सर्व वड्या करून घ्या.
*एका कढईत तेल तापवून मध्यम आचेवर वडी
 गुलाबी रंगावर तळून घ्या.
* ही वडी इतकी खमंग असते की आपले घर पूर्ण सुवासाने दरवळले असेल.
*खमंग व चमचमीत पुडाच्या वडी चा आनंद घ्या 😆

Let it cool and grind from the mixer by adding 2 tbsp water. •In a wide based pan take wheat flour,add 6 tsp oil and salt, mix it properly with the help of hands. Add spinach puree and make a dough.
