Pakatil Purya... पाकातील पुऱ्या It's a typical maharashtrian sweet dish... Very easy to prepare and delicious too. Ingredients... *Fine semolina...1 Cup 1 Cup...150 ml *Sugar .... 1 Cup *Desi ghee in liquid form.... 2 tsp *Curd...1/2 Cup... approximately *Ghee...for deep frying *Green cardamom powder...1/4 tsp *Dry fruits Powder...2 tbsp... optional Recipe... *Add ghee in semolina and just pulse it from the mixer. Remove from the mixer and take it in a pan. *Make a dough by using curd only. Dough should not be too hard or too soft. Let the dough rest for 30 minutes. *Now roll the dough into small Puri's. I have made bite size. *Deep fry Puri in ghee till light pink in colour. *You can store these by preparing it in a day in advance. *Take 1/2 cup sugar in a heavy base pan. Add 1/4 th Cup water. Put it on a gas on medium flame. *Let sugar dissolve and when it starts boiling reduce the gas flame. Let it boil for 3..4 minutes. *Switch off the gas. Add 1/4 tsp green cardam

Dal Tadka
Desi ghee tadka on moong dal, not only goes well with Roti or Rice but I like to have one bowl as it...
Ingredients...
•Yellow Moong Dal /Green Gram 1 cup
• Salt 1 tsp
•Red Chilly Powder 1 tsp
•Desi Ghee /Clarified Butter 1 tablespoon
•Green Chillies 2
•Coriander Chopped 1 tablespoon
•Jira /Cumin seeds 1/2 tsp
•Lemon juice 2 tsp
•Turmeric Powder 1/4 tsp
Method....
•Wash n soak Moong Dal for 1 hour
•Cook it in a open pan by adding 4 Cups water •Add Turmeric n cook on low flame till mushy in texture
•Add water if necessary..when done switch off the gas nmash it properly
•Add Salt n Lemon juice
•Heat Ghee in a tadka pan add Cumin seeds, when it splutters
•Add Chopped Green Chillies Switch off the gas
•Add Red Chilly Powder after 2 minutes so it will not get burn
•Pour it on Dal
•Add finely Chopped Coriander
•Serve hot with Roti or Rice...

मुगाचे वरण
पिवळ्या मुगाच्या डाळीचे हे वरण भातासोबत किंवा पोळी सोबत तर छान लागतेच, पण मी तर 1 वाटी तसेही पिते, मस्तच लागते...
पिवळी/बिना सालीची मुग डाळ 1 वाटी
मीठ 1 tsp
तिखट 1 tsp
हिरवी मिरची 2
कोथिंबीर 1/4 वाटी
साजुक तुप 1 tbspn
जिरे 1/2 tsp
हळद 1/4 tsp
लिंबूरस 2 tsp
कृती
प्रथम मुग डाळ स्वच्छ धुवून 1 तास भिजत घाला.
जाड बुडाच्या भांड्यात किंवा कढईत 4 वाटी पाणी व हळद घालून शिजायला ठेवा, गरज वाटली तर पाणी घाला.
मीठ घालून घ्या.
छोटी कढई तापवून त्यात तुप व जिरे घालून फोडणी करा.
हिरवी मिरची चिरून घाला, व गॅस बंद करा.
2 मिनिटानि तिखट घालून डाळीवर ओता.
मिक्स करून लिंबूरस व कोथिंबीर घाला.
हि डाळ भातासोबत मस्त लागते.
