#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Spicy Rice
This is a typical Maharashtrian traditional dish... very tasty, delicious and full of flavours.
The use of plenty of vegetables and the right amount of spices makes the rice more palatable and fragrant.
When this rice is cooked at home, the surrounding area is filled with such an amazing aroma.
You need hot Kadhi  in rainy season or winter .... but in summer you need cool buttermilk or whey ...
This Rice tastes better when accompanied with crunchy juicy Jalebi....
Ingredients....
* Aromatic Rice ... 1/2 Cup
1 Cup...400 ml
*Fresh green Peas ... 1/2 Cup
*Chopped carrots ... 1/2 Cup
*Dry Coconut grated ... 1/4 Cup
*Chopped Coriander ... 1/4 cup
*Chopped green chillies ... 3
*Garlic cloves ... 3
*Grated Ginger ... 1 tsp
*Oil ...4 Tablespoon
*Turmeric ... 1/2 tsp
*Salt ... 1 tsp
*Garam masala ...1/2 tsp
*Goda masala ... 1 tsp... optional
*Coriander powder ... 2 tsp
Action ...
* First of all, wash the rice , drain the water and set aside.
* Grind coconut , chilli,
Coriander, ginger and garlic in a mixer without adding water.
* Heat Oil in a cooker and add turmeric powder and chilli... coriander grinded mix, saute on low flame for 3..4 minutes.
* Then add green peas and carrots and saute for 2 minutes.  Add coriander powder, goda masala, garam masala.
* Add washed rice and mix lightly by hand.
* Add 1 cups of hot water and salt and mix well. Water used is double the quantity of Rice.
* Turn off the gas immediately one whistle , over medium heat.
* Serve with hot rice, Sajuk Ghee and Curry.

मसालेभात फार चवदार व स्वादिष्ट लागतो.
भरपूर भाजी व योग्य प्रमाणात मसाल्यांचा वापर भाताला अधिक खमंग व सुगंधी बनवतो.
हा भात जेंव्हा घरी शिजत असतो तेंव्हा आजुबाजुचा परीसर अप्रतिम अशा सुगंधाने दरवळत असतो.
पावसाळा  किंवा हिवाळ्यात सोबत हवी गरमागरम कढी ....तर उन्हाळ्यात मस्त थंडगार ताक किंवा मठ्ठा...
सोबत जिलबी असेल तर ... अतिशय अप्रतिम 😋😋😋😋
साहित्य...
*सुगंधी तांदूळ... एक वाटी
*मटर... एक वाटी
*गाजर चिरून... अर्धी वाटी
*सुके खोबरे कीस... अर्धी वाटी
*कोथिंबीर चिरून... अर्धी वाटी
*हिरवी मिरची चिरून...3
*लसूण पाकळ्या...3
*आलेकीस....1 टिस्पून
*तेल... एक टेबलस्पून
*हळद...1/2 टिस्पून
*मीठ...1 टिस्पून
*गरम मसाला...1/2 टिस्पून
*गोडा मसाला...1 टिस्पून
*धनेपूड...1 टिस्पून
कृती...
*सर्व प्रथम तांदूळ स्वच्छ धुवून, पाणी निथळून बाजूला ठेवून द्या.
*खोबरे कीस, मिरची, कोथिंबीर, आले व लसूण पाणी न घालता मिक्सरमध्ये वाटून घ्या.
*कुकरमध्ये तेल तापवून हळद, मिरची चे वाटण मंद आचेवर खमंग परतून घ्या.
*मग हिरवे मटर व गाजर, घालून दोन मिनिटे परतून घ्या. धनेपूड, गोडा मसाला, गरम मसाला घाला.
*धुतलेले तांदूळ घालून हलक्या हाताने एकत्र करा.
*दोन वाट्या गरम पाणी व मीठ घालून छान ढवळून घ्या.
*मध्यम आचेवर एक शिट्टी वाजली की गॅस लगेच बंद करा.
*वाफ जिरली की गरमागरम भात, साजूक तुप व कढी सोबत सर्व्ह करा.
टीप.... तुम्ही हा भात कुकरमध्ये न करता जाड बुडाच्या पातेल्यात करु शकता... फक्त पाणी तीन वाट्या घालून मंद आचेवर, पाणी आटेपर्यंत शिजवून घ्या. झाकण ठेवायचं नाही.
