#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Puranpoli  is the signature sweet dish of Maharashtra .
This is prepared on every auspicious occasion & I liked by one and all.
Though it seems to be time consuming it can be prepared easily with little bit pre preparation.
It is said that only skilled hands can prepare this perfectly...
But if you will follow all the  instructions  you can also do it with perfection.
Ingrediants. .
*Chana/Split  Chickpea Dal...1 cup
1 Cup.... 150 ml
*Sugar..1 Cup
*Jaggery... Lemon Size
*Jaiphal/Nutmeg powder. ..1/4 tsp
*Green Cardamom Powder...1/4 tsp
*Maida...1/2 Cup n
*Wheat flour...1/2 Cup
*Oil...5 tsp
*Salt... a pinch
*Rice flour... for rolling.
Method...
*Soak Chana Dal for 1/2 hour...
*Pressure cook it by adding 2 Cups water on medium flame for 2 pressures.
*Let it cool, remove the lid add Sugar & Jaggery. Mix properly.
*Once again cook on low flame stirring constantly on low flame.
* Cook till soft, place the spoon in the centre of the pan, if it stands on its own, it is perfectly cooked. Switch off the gas.
*Strain it from the Puranyantra.
*You can mash it with the help of hand blender till soft.
*Add Nutmeg and Cardamom Powder, mix properly.
*You can do all this one day prior also. Refrigerate it for more shelf life. No need to Refrigerate if you are using immediately next day.
*Mix Maida and Wheat flour...add Salt n Oil...mix properly. Now add water n make a dough by using one cup water only.
*Now take little water in your hands mash the dough, repeat this process at least for 15 minutes. Apply 1 tsp Oil.
*Let this dough rest at least for a hour.
*Take a lemon size ball dough. ..roll like poori...put atleast 2.5 times Puran in the centre..cover it with remaining part of poori by tender hands... remove the excess flour if any...roll out carefully by using Rice flour..
*Put it  carefully on hot tava...cook by both sides till golden...remove from tava gently. .Gas temperature should be slight lower than medium.
*Serve with lots of homemade ghee...
*This will make 5 Puranpolis.
*Will last for 2..3 days.
*It tastes heavenly. ..

पुरणपोळी
होळी म्हणजे पुरणपोळी 😋😋😋
पुरणपोळी आपल्या कडे प्रत्येक शुभकार्यात केले जाते....मग ती मंगळागौर, कुळाचार, श्रावणी शुक्रवार, लक्ष्मीपुजन, नवमी, पौर्णिमा काहीही असू शकते...
पुरणपोळीला मराठी स्वयंपाकात मानाचं स्थान आहे... पण ती उत्तम जमली तरच खायला मजा येते.
ती परोठ्यासारखी जाड नको ,पुरी एवढी छोटीशी नको, छान पातळ एकदम  काठापर्यंत पुरण भरलेली , पोळीतील पुरण म‌उसुत व खमंग हवं, भसकन कोरडे पुरण बाहेर पडायला नको.,नाजूक गुलाबी रंगावर भाजलेली व नंतर वरून भरपूर  तुपाची धार घालून पुरणपोळी मस्त लागते...😋😋
कधीकधी ती नारळाच्या दुधासोबत किंवा साध्या दुधा सोबत सुद्धा मस्त लागते...
आज बघु या पुरणपोळी कशी करायची...
साहित्य...
*हरभऱ्याची डाळ एक वाटी
एक वाटी...150 मिली
*साखर ...एक वाटी
*गुळ... एका लिंबाएवढा
*जायफळ पूड... पाव चमचा
*वेलची पूड ...पाव चमचा
*मैदा ...अर्धी वाटी
*कणीक ...अर्धी वाटी
*मोहनासाठी तेल... 5 टीस्पून
*मीठ... चिमूटभर
*तांदूळ पीठ... लाटण्यासाठी
कृती...
*हरभरा डाळ स्वच्छ धुऊन अर्धा तास भिजत घाला. कुकर मध्ये डाळ व दोन वाट्या पाणी घालून मध्यम आचेवर दोन शिट्या होईपर्यंत शिजवून घ्या.
*डाळ गार झाल्यावर त्यात एक वाटी साखर व लिंबाएवढा गूळ घालून मध्यम आचेवर सतत हालवत शिजवून घ्या. पुरणाच्या मध्यभागी सराटा केव्हा चमचा उभा राहिला म्हणजे पुरण बरोबर शिजले असे समजावे व गॅस बंद करावा.
*गरम-गरम पुरण पुरणयंत्रातून तून वाटून घ्या.
पुरणयंत्र नसल्यास स्टीलची जाळी असलेल्या सुप गाळणीतून किंवा हॅंड ब्लेंडर ने  पण करू शकता.
*नंतर त्या पुरणात जायफळपूड वेलचीपूड घालून छान एकत्र करून ठेवून द्या.
*हे पुरण तुम्ही एक दिवस आधी शिजवून सुद्धा ठेवू शकता... फ्रिजमध्ये तीन-चार दिवस पण छान राहते. पण जर दुसऱ्या दिवशी करणार असाल तर बाहेर सुद्धा चांगले राहते.
*साखर ... गुळाचे प्रमाण आपल्या आवडीनुसार कमी-जास्त करू शकता.
*मैदा , कणीक, चिमुटभर मीठ, तेल घालून एकत्र करा... त्याच्यात अर्धी वाटी पाणी घालून घट्ट गोळा भिजवून घ्या .नंतर पाण्याचा हात लावत लावत जवळ पंधरा मिनिटं कणिक मळून घ्या. छान म‌उसुत कणीक होते.
*थोडा तेलाचा हात लावून हा कणकेचा गोळा कमीत कमी एक तास तरी मुरत ठेवा.
*पोळी लाटायला घेताना लिंबाएवढा गोळा घ्या, त्याची छोटीशी पुरी लाटून नंतर त्यावर कणकेच्या गोळ्याच्या अडीच पट पुरणाचा गोळा ठेवा व हलक्या हाताने चारी बाजूंनी गोळा बंद करा... वरचा जास्तीचा कणकेचा गोळा काढून ठेवा... तांदूळ पीठ लावून मोठी छान पोळी लाटून घ्या.
*हलक्या हाताने लोखंडी तापलेल्या तव्यावर टाका ...खरपूस रंगावर दोन्ही बाजूने पोळी गुलाबीसर भाजून घ्या .
*गॅस मध्यम पेक्षा थोडा कमी आचेवर ठेवा
पोळी वर भरपूर तूप घालून पुरणपोळी चा आनंद घ्या.
*वरील प्रमाणात पाच पुरणपोळ्या होतील.
