#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. In the today's fast-paced environment we have almost forgot to eat Millets. Our ancestors were eating more Millets besides healthy work life style.
Ragi or Nachani is a best source of Calcium ...fibre..full of energy.
This Dudholi is delicious to eat... just like a Burfi... very easy to prepare also.
Ingredients...
*Ragi...1 Cup
1 Cup...150 ml.
*Fresh Grated Coconut...1 Cup
*Jaggery Chopped...1.5 Cup
*Cashew nuts Chopped...1 tbsp
*Green Cardamom Powder...1/2 tsp
*Ghee...3 tsp
Method...
*Clean & Wash the Ragi and soak in Water for four hours.
*Grind along with fresh grated Coconut by adding 1 Cup of water.
Strain this from the fine seive...
*Once again add 1 Cup of water... grind from the Mixer and strain it.
*In a thick based Pan pour this Ragi Coconut mix, add Jaggery...mix properly.
*Keep it on a gas stirring constantly.
Within few minutes it will start thickening.
*Stirr constantly until it becomes a lump.
*Switch off the gas, add 2 tsp Ghee & Cardamom Powder.
*Grease the plate, pour this mixture evenly... garnish with chopped Cashew.
*When it cools... cut into desired shape.
*You can adjust the sweetness by adjusting Jaggery quantity as per your choice.
*I have garnished with fresh grated Coconut also.

आज कालच्या यांत्रिक व गतिमान  जगात आपल्या आहाराकडे आपण फारसे लक्ष देऊ शकत नाही आणि मग सुरू होतात वेगवेगळे आजार...
हाडे ठिसूळ होणे... कंबर दुखी ...थोडेही कुठे पडले की लगेच फ्रॅक्चर म्हणे या सारख्या कॅल्शियमच्या  अभावाने होणाऱ्या गोष्टी...
नाचणी ही पचायला हलकी...कॅल्शियम  व चोथा युक्त असे धान्य आहे.
आज आपण नाचणी पासून होणारी मिठाई पाहणार आहोत...
तिचे नाव आहे नाचणीची दूधोळी...
अतिशय पौष्टिक व झटपट होते.
साहित्य...
*नाचणी... एक वाटी
एक वाटी...150 मिली.
*ओल्या नारळाचा किस...एक वाटी
*गुळ चिरून...दिड वाटी
*काजूचे तुकडे...एक टेबलस्पून
*वेलची पूड...अर्धा टीस्पून
*तुप... तीन टीस्पून
कृती...
*नाचणी स्वच्छ साफ करून... धुवून...चार तास भिजत घाला.
*भिजवलेली नाचणी व खोबरे कीस एक वाटी पाणी घालून मिक्सरमध्ये बारीक वाटून गाळून घ्या.
*पुन्हा एक वाटी पाणी घालून... मिक्सरमध्ये बारीक वाटून गाळून घ्यावे.
*एका जाड बुडाच्या भांड्यात किंवा कढईत हे वाटलेले दुध व गुळ विरघळून घ्या.
*गॅसवर हे मिश्रण मध्यम आचेवर शिजवा...सतत ढवळत राहावे.
*थोड्याच वेळात मिश्रण दाट व्हायला सुरुवात होते... छान घट्ट गोळा होईपर्यंत शिजवून घ्या.
*गॅस बंद करावा... दोन टीस्पून तुप व वेलची पूड घालून एकत्र करा.
*तुप लावलेल्या ताटलीत दाटुन वरुन काजु तुकडे पण घाला.
*गार झाल्यावर वड्या पाडाव्यात.
*मी वरून ओले खोबरे कीस पण घातला आहे.
*गुळाचे प्रमाण आपल्या आवडीनुसार कमी-जास्त प्रमाणात घेऊ शकता.
