#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Dhokla

This is not the quick version of Dhokla as previously shared .
Here we are using Rice ,Split Chickpea Dal as well as Split Black Gram  Dal.
Since this is the fermented food it contains   Vitamin B , K and healthy to eat.
This Dhokla is spongy and Tasty.
Ingredients
*Rice 1 ...cup
*Split Chickpea Dal... 1/2 cup
*Split Black Gram Dal... 1/4  cup
*Eno Fruit Salt ...1/2 teaspoon
*Grated Ginger... 1.5 teaspoon
*Crushed Garlic ...1 teaspoon
*Salt... 1.5 teaspoon
*Oil ....4 TSP
For tempering...
 *Oil... 1.5 tablespoon
*Mustard Seeds... 1/2 teaspoon
*Cumin Seeds..1/4 the teaspoon
*Asafoetida powder ...1/4 teaspoon
*Green Chillies...4
*Curry Leaves... 15
*Seasame Seeds...2  teaspoon
Method...
*Wash and soak Rice and the dals together in water for 4 to 5 hours.
*Grind it from the mixer till smooth .
*Let it ferment overnight .
*In the morning add 4 teaspoon Oil ,grated Ginger , crushed Garlic and Salt.
*Mix it properly ,the batter consistency should be like Idli batter.
*If  needed you can add 1/2 cup water.
*Greece an aluminium container of 8" size. *Preheat the water in the  big pan .
*Add half teaspoon Eno fruit salt in an already prepared Dhokla mix .
*Mix thoroughly , immediately pour the batter m in the greased pan.
*Keep this pan in the steamer and cover it with the lid.
*Let it steam for 15 minutes .
*Gas should be on medium flame
*After 15 minutes switch off the gas .
*Remove the container out, let it cool .
*After 5 minutes invert the cooked Dhokla in a plate .
*Cut the Dhokla pieces of your choice.
For tempering...
 *Heat the oil in a pan ,add mustard seeds and Cumin seeds.
 *After it splutters, add Asafoetida powder, Green Chillies pieces, Curry Leaves and Seasame seeds .
*Switch off the gas after two minutes.
 *Pour  this tempering over already prepared Dhokla pieces.
*Garnish it with chopped coriander and grated coconut .
Yummy Spongy Dhokla is ready .

ढोकळा
आज आपण जी कृती पाहणार आहोत ती आधीच्या इन्स्टंट ढोकळ्याच्या रेसिपी पेक्षा फार वेगळी आहे .
हे पीठ भिजवून, वाटून व आंबवलेल्या  तांदूळ आणि मिश्र डाळींचे आहे , यामुळे आपल्याला विटामिन बी, के  ही जीवनसत्त्व मिळतात.
हा ढोकळा पचायला हलका आहे.
अतिशय चवदार लागतो  हा ढोकळा.
कृती ...
*तांदूळ... एक वाटी
*हरभऱ्याची डाळ ...अर्धी वाटी
*उडीद डाळ... पाव वाटी
*किसलेले आले ...दीड टीस्पून
 *ठेचलेला लसूण ...एक टी स्पून
*मीठ ...दोन टीस्पून
 *इनो फ्रूट सॉल्ट ...अर्धा टी स्पून
 *तेल मोहनासाठी ...चार टीस्पून
फोडणीचे साहित्य...
 *तेल ...दीड टेबलस्पून
 *मोहरी... अर्धा टीस्पून
*जिरे ...पाव टी स्पून
*हिरव्या मिरच्या... चार
*कढीलिंबाची पाने... १५
*तीळ... दोन टीस्पून
*हिंग.. पाव टीस्पून
कृती
*तांदूळ व दोन्ही डाळी स्वच्छ धुवून पाच ते सहा तास भिजवून घ्या .
*नंतर या डाळी मिक्सरमध्ये बारीक वाटून घ्या.
*हे मिश्रण इडली पीठा सारखे पातळ असावे.
*हे पीठ रात्रभर आंबवण्यासाठी ठेवा.
*सकाळी त्यामध्ये चार टीस्पून तेल, मीठ, किसलेले आले व लसूण पेस्ट घालून मिक्स करून घ्या . गरज वाटल्यास अर्धी वाटी पाणी घालू शकता.
*एका मोठ्या भांड्यात पाणी गरम करायला ठेवा
*8"अलुमीनीयम चे भांडे घेऊन त्याला तेल लावून घ्या.
*ढोकळा पीठात अर्धा टीस्पून इनो घालून, पटापट मिक्स करा.
*हे मिश्रण तेल लावलेल्या भांड्यात घालून ढोकळ्याचे भांडे, आपण आधीच गरम करत ठेवलेल्या पाण्याच्या भांड्यात ठेवा. *वरून झाकण ठेवून वाफवून घ्या.
*गॅस मध्यम आचेवर ठेवा.
* पंधरा मिनिटांनी बाहेर काढा.
*ढोकळा गार होऊ द्या ,गार झाल्यावर एका ताटलीत ढोकळा भांडे उलटे करून काढून घ्या.
*हव्या त्या आकाराचे तुकडे करा .
*फोडणीसाठी एका कढईत तेल तापत ठेवा, मोहरी व जीरे घालून तडतडल्यावर त्यात हिंग व तिळ घाला, हिरव्या मिरचीचे तुकडे व कडिपत्त्याची पाने घाला.
*दोन मिनिटांनी गॅस बंद करा.
*हि फोडणी ढोकळ्याच्या  तुकड्यांवर खालून घ्या.
*कोथिंबीर व खोबरे कीस घालून सजवा .
*आपला लुसलुशीत जाळीदार ढोकळा तयार.
