In some areas this veg is also called as "गुनगुण्याची भाजी" Ingredients  1 Cup...150 ml *Patur Veg... finely chopped...3 cups *Yellow moong dal... 1/2 Cup  *Garlic pods... 6 *Oil... 4 tbspn  *Mustard seeds... 1/2 tsp  *Turmeric powder... 1/2 tsp *Red chilli powder... 1/2 tsp  *Salt... 1/2 tsp  *Lemon juice... 1 tsp  *Chopped coriander... 1 tbspn  *Grated coconut... 1 tbspn  Method... *Wash and soak yellow moong dal in sufficient water for 2 hours. *Here I have taken 2 bundle s of Patur Veg. Clean and take leaves only. Wash it thoroughly and chop finely.

Teasel Gourd Stirfry

This vegetable is available in Mansoon only.
Teasel Gourd is also known as Kartule, kantole etc.
It tastes like Bittergourd n very tasty too.
It has medicinal value also.
•Teasel Gourd 250 gms.
•Oil 3 tbspn
•Mustard n Cumin seeds 1/4 tsp each
•Turmeric Powder 1/4 tsp
•Red Chilly Powder 1 tsp
•Salt 1/2 tsp
•Chickpea flour 2 tsp.
•Asafoetida Powder ...big pinch
•Wash n thinly sliced the Teasel Gourd.
•Heat Oil in Iron kadhai or pan, add Mustard n Cumin seeds.
•After it splutters add Asafoetida Powder n Turmeric Powder,  add sliced Teasel Gourd.
•Saute on medium flame till crispy.
•Add Red Chilly Powder n Salt.
•Also add Chickpea flour.
•Mix well n cook for 2..3 mts.
Goes well with Dal Rice or Roti.

कर्टुले भाजी
पावसाळ्यात मिळणारी हि भाजी चविष्ट तर लागतेच, पण औषधी पण आहे. कुरकुरीत भाजी सर्वानाच आवडते.
कर्टुले...250 ग्राम
तेल 3 tbspn
 तिखट 1 tsp
मीठ 1/2 tsp
मोहरी व जिरे प्रत्येकी 1/4 tsp
हळद 1/4 tsp
हिंग 1 मोठी चिमूट
बेसन 2 tsp गरज वाटली तर
कर्टुले स्वच्छ धुवुन पातळ काचऱ्या करून घ्या.
लोखंडी कढईत तेल तापवून मोहरी व जिरे घालून फोडणी करा.
हिंग, हळद व मग कर्टुले काप घाला.
मध्यम आचेवर कुरकुरीत होईपर्यंत परता.
तिखट व मीठ घाला.
छान मिक्स करा.
तेल जास्त आहे असे वाटत असेल तर 2 tsp बेसन घालून 3,4 मिनिटे परता.
कुरकुरीत खमंग काचऱ्या तयार.
पोळी, वरण भातासोबत तोंडी लावणे म्हणून छान लागतात.
