Homemade Clarified Butter / Ghee
Home-made Ghee is in one of the purest form, and super tasty medicine for us.
If consumed everyday in moderate form, it will helps us to remain healthy.
In India we have a tradition to prepare Ghee at home.
•If you are using everyday 1 litre Full Fat Milk. 
•After heating it, keep it in Refrigerator atleast fir 6..7 hours.
•This helps to set the Creamy Layer or Malai.
•Before reheating the milk , take all the Malai in another pan.
•Add 1 tbspn homemade Curd in it, mix properly.
*Store this malai curd in refrigerator.
•Repeat this process for 10 days.
•On the 10 th day, take all the Malai Curd in a big pan.
•Keep this pan out if Refrigerator for 5..6 hours.
•Add 2 cups water to it, with the help of churner chrun it, continuously.
1 Cup is 150 ml.
•Within 5 minutes, you will get Butter n Buttermilk seperately.
•Collect all the Butter in a heavy based pan, take
care to remove all the Buttermilk from it , you can wash it by adding water, n remove all the water from it gently.  This we are doing to get the pure Ghee or Clarified Butter.
•Heat the pan with Butter on the gas stove on low flame.
•Keep on checking occasionaly after 10 minutes.
•You will get Clarified Butter or Ghee within 10..15 minutes.
•Strain in the Steel or Glass  container with the help of the strainer.
•Cover with the lid , still warm.
•Store it outside the fridge.
•This will yield 350 ml. Ghee approximately
•The pure home made Clarified Butter or Ghee is ready to use.
Every day you can have it with Rice,or Dal.
Make various Sweet dishes and Sweets from it.
Remaining Buttermilk can be used for cooking various Recipe, which I will keep on sharing.

घरचे कढवलेले साजूक तूप अन्नशुद्धीचे काम तर करतेच, शिवाय आपले आरोग्यही चांगले राखते. घरचे असल्याने शुद्धतेची हमी...
आपले हृदय मजबूत ठेवायला घरचे दही विरजवून केलेले तूप चांगले असे आता अमेरिकेतील डॉक्टर सुद्धा मान्य करतात.
पण हे तुपात दही विरजण लावून केले तरच आरोग्य दायी असते.
बऱ्याच घरी फक्त साय एका भांड्यात जमा करून, बरीच साय जमली की तशीच गॅसवर ठेवून तुपात काढतात.
तसं केल्याने तुपात तर मिळेल पण ते आरोग्यासाठी घातक असते... शिवाय बेरी पण खुप निघते.
आज आपण उत्तम तुप घरीच कसे झटपट होते ते पाहुया... अक्षरशः 5 मिनिटांत लोणी रवी ने घुसळून निघते...
ह्या तुपात तुम्ही वेगवेगळे पदार्थ करू शकता, रोज च्या जेवणात तर दोन्ही वेळेस खाल्लेच पाहिजे.
शिवाय उरलेले ताक पण वेगवेगळ्या पदार्थांत व नुसते पिण्यासाठी वापरू शकता.

 कृती...
* 1 लिटर फुल फॅट दाट दूध मंद आचेवर तापवून कोमट झाल्यावर फ्रीजमध्ये ठेवावे.
* 5..6 तासात त्याच्यावर जाड साय जमते..ती साय एका भांड्यात काढून 1..2चमचे आंबट दही घालून फ्रीजमध्ये ठेवून द्या.
*असे रोज करा...10 दिवसांनी ते सायी चे दही 4..5 तास बाहेर ठेवून 2 वाटी पाणी घालून घुसळले कि पाच मिनिटात लोण्याचा गोळा येतो.
एक वाटी...150 मिली.
*लोणी एका जाड बुडाच्या भांड्यात किंवा कुकरमध्ये काढून घ्या...लोण्यात ताक असेल तर स्वच्छ धुऊन पाणी काढून, मंद आचेवर तापवायला ठेवा. घरभर साजुक तुपाचा खमंग सुवास दरवळतो.
*10...15 मिनिटांनी तुप तयार होते...त्यात 1चिमुटभर मीठ घालून गॅस बंद करा.
*स्वच्छ भांडे पाण्याने धुऊन त्यात तुप गाळून लगेच झाकून ठेवावे.
*दुसऱ्या दिवशी छान रवाळ तुप तयार होते.
हवं असल्यास फ्रीजमध्ये ठेवून द्या.
बाहेर पण महीनाभर चांगले राहते.
 *ही पद्धतवापरून केले तर 10 दिवसात 2 वाट्या साजुक शुद्ध तूप मिळते असा माझा अनुभव आहे.
*नोकरी करूनही घरीच झटपट तूप मिळते, जेवण छान लागते.
