#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Sambar is a South Indian type of dal which goes very well with Rice, Idli , Dosa, Vada...
Very flavorful n tasty ...😋😋
Very nutritive, full of spices n vegetables, aromatic dish...
If you are preparing sambar...the aroma of that will fill in your house so much that all will come to know that today they are having Sambar in their meals...🙂🙂
Ingredients...
*Split Pigeon Dal/Arahar or Tuvar Dal..1 Cup
1cup....200 ml
*Chopped Onions...1 Cup
*Chopped Tomatoes...1 Cup
*Drumsticks pieces 3" long..6
*Curry Leaves...1 spring
*Sambar Masala...1 tbsp
*Tamarind paste..1 tsp
*Turmeric powder..1/4 tsp
*Red chilli powder...1 tsp
*Salt...1 tsp
*Oil /Ghee...2 tsp
Method...
*Wash and soak Split Pigeon Dal for 30 minutes.
*Pressure cook the dal in the cooker by adding two cups water and one fourth spoon turmeric powder.
*Let it cook for 2 pressure and then for 5 minutes on low flame.
*Let it cool and then mash properly till smooth.
*In another Pan boil Onion , Tomato, Drumstick pieces by adding two cups water.
*Also add Tamarind pulp  in it , let Onion and Tomatoes be soft and the raw  flever of Tamarind goes off.
* When the Tomato Onion mix becomes soft  add cooked Dal, mix properly,  also add 2 cup water.
*Add Sambar Masala and Curry leaves , mix properly, let it boil for 5 minutes .Add Salt n mix.
*Heat Ghee/Oil in another Pan add 1/2 tsp mustard seeds when it splutters add Red Chilli Powder n pour immediately over the Sambar.
*Cover with the lid to keep the flavours intact.
Done..
Serve hot with Rice, Idli, Vada, Dosa..

Tip...
1) You can add brinjal, red pumpkin, ashgourd, bottle gourd, raddish any vegetable of your choice in Sambar.
These Vegies tastes suuuperb.

सांबार
सांबार हा एक दाक्षिणात्य प्रकारचा वरणाचा प्रकार आहे.
सांबार हे भातासोबत ,इडली ,दोसा, वडे कशाही सोबत सुंदर व चवदार लागते.
सांबार इतके सुंदर व सुवासिक असते, कि जर घरी बनत असेल सगळीकडे त्याचा घमघमाट पसरला असतो ,तुम्हाला सांगायची गरजच नाही की आजच्या मेनूत सांबार  आहे.
सांबार मध्ये भरपूर भाज्या, मसाले, मेथी, चिंच डाळींचा प्रयोग असल्यामुळे ते आपल्या आरोग्यासाठी पण चांगले आहे.
आज बघूया अगदी परफेक्ट सांबार कसे करायचे ते....
साहित्य...
*तुरीची डाळ ...एक वाटी
1 वाटी....200 मिली.
*कांदा चिरून... एक वाटी
*टमाटे चिरून ...एक वाटी
*शेवग्याच्या शेंगांचे तीन इंच लांबीचे तुकडे.. 6 *कढीपत्ता ...10 ते 12 पाने
*सांबार मसाला ...एक टेबल स्पून
*हळद ...पाव टिस्पून
*तिखट ...एक टीस्पून
*मीठ ....एक टीस्पून
*तेल/ तुपाचे... दोन टीस्पून
*चिंचेचा कोळ...एक टीस्पून
कृती...
*प्रथम तूरडाळ स्वच्छ धुऊन  तीस मिनिटे पाण्यात भिजत ठेवा.
*नंतर एका कुकरमध्ये भिजवलेली तूर डाळ, पाव टीस्पून हळद व दोन वाट्या पाणी घालून शिजायला ठेवा .
*दोन शिट्या झाल्यावर मंद गॅसवर पाच मिनिटं शिजू द्या.
*गार झाल्यावर डाळ  घोटून घ्या.
*एका भांड्यात चिरलेले कांदे ,टमाटे ,शेवग्याच्या शेंगांचे तुकडे व चिंचेचा कोळ आणि दोन वाट्या पाणी घालून शिजायला ठेवा.
*कांदा  व टमाटे म‌उ झाले की त्याच्यात आपली शिजवलेली तुरीची डाळ घाला. 2 वाटी पाणी घाला.
*याच मिश्रणात सांबार मसाला, कढीपत्ता व मीठ घालून पाच मिनिटे उकळू द्या.
*एका छोट्या कढईत तेल किंवा तूप गरम करून ,पाव चमचा मोहरी घाला, मोहरी तडतडल्यानंतर एक टिस्पून तिखट घालुन गॅस लगेच बंद करा.
*वरील फोडणी आपल्या सांबारमध्ये घालून  सांबार खालचा गॅस पण बंद करा.
*लगेच झाकून ठेवा म्हणजे फोडणीचा सुगंध त्याच्यात उत्तमपैकी मुरतो.
*गरमा गरम सांबार भात इडली डोसा केव्हा वड्यासोबत सर्व्ह करा.
टीप... तुम्ही सांबार मध्ये वांगी, दुधी भोपळा, लाल भोपळा, खारी कोहळे, मुळा अशा अनेक आवडीनुसार भाजल्या घालु शकता, त्यामुळे सांबार जास्त चवदार चविष्ट लागते.
