Since I had very little time today, I prepared this quick version of Aluchi Vadi. It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Ingredients *Full fat milk...1 litre *Sugar... 8 tsp *Custard powder... 1 tbspn *Milk....3 tbsp for mixing custard powder. *Saffron threads... a big pinch *Green cardamom powder... 1/4 tsp Method *Boil milk in a thick based pan on a low flame, stirring occasionally. Boil milk till it becomes half. *Add sugar and saffron threads. Cook till sugar dissolves. *Mix custard powder in 3 tbspn milk without forming lumps. Milk should be of normal room temperature. *Add this custard powder milk in the milk on the gas. Stirr continuously else it will stuck to the bottom. It will cook and thicken within 3-4 minutes. *Switch off the gas. *Let it cool on normal room temperature.
