Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot. 

Since I had very little time today, I prepared this quick version of Aluchi Vadi. 

It has the same delicious traditional taste but is much easier and faster to make.

Ingredients

(1 cup = 150 ml)

*Washed & finely chopped colocasia (taro) leaves, – 2 cups

*Tamarind – a lemon-sized piece

*Gram flour (besan) – 1 cup

*Rice flour – ½ cup

*Red chilli powder – 3 teaspoons

*Salt – 1½ teaspoons

*Sugar – 1 teaspoon

*Coriander powder – 3 teaspoons

*Carom seeds (ajwain) – ¼ teaspoon

*Turmeric powder – 1 teaspoon

*White sesame seeds – 1 tablespoon

Method

1. Clean the tamarind and soak it in 1/2 cup of water for 15–20 minutes. Extract the pulp and keep it aside.

2. In a large bowl, combine the chopped colocasia leaves, gram flour, rice flour, red chilli powder, salt, sugar, coriander powder, carom seeds, turmeric powder, and tamarind pulp.

3. Gradually add water as needed and make a batter slightly softer than chapati dough.

4. Grease a plate or shallow steaming tray with oil, including the sides and the centre. Spread and flatten the mixture evenly with your hands.

5. Sprinkle white sesame seeds on top and gently press them into the mixture.

6. Heat water in a large pan or pressure cooker. Place a stand inside and keep the prepared plate on it. Cover and steam for 20 minutes.

7. Switch off the heat and remove the plate.

8. Once cooled, cut the steamed mixture into pieces of your preferred shape and shallow fry them.

9. I shallow-fried the vadis in a cast-iron pan using just 3 tablespoons of oil until they turned beautifully crisp.

10. Your delicious and flavourful Aluchi Vadi is now ready to enjoy!

अळूची वडी 

आजकाल पावसाळ्यात कुंडीमध्ये अतिशय छोटी छोटी अळूची पाने येत आहेत. व आज माझ्याकडे वेळ पण कमी होता.

 नेहमी करतो तशीच चव असलेली तरीही झटपट असणारी अशी ही अळूची वडी केली आहे.

साहित्य...

१ वाटी... १५० मिली

*अळूची पाने स्वच्छ धुऊन बारीक चिरून .... २ वाट्या 

*चिंच - लिंबू एवढी

*बेसन पीठ - १ वाटी 

*तांदुळाचे पीठ - १/२ वाटी 

*तिखट - ३ टीस्पून 

*मीठ - १.५ टीस्पून 

*साखर - १ टिस्पून 

*धने पूड - ३ टीस्पून 

*ओवा - १/४ टिस्पून 

*हळद - एक टीस्पून

*पांढरे तीळ - १ टेबलस्पून 


कृती 

*सर्वप्रथम चिंच साफ करून वाटीभर पाण्यात भिजवून घ्या पंधरा-वीस मिनिटांनी त्याचा कोळ काढून घ्या. 

*नंतर एका मोठ्या भांड्यात चिरलेली पाने ,बेसन पीठ, तांदूळ पीठ ,तिखट ,मीठ, साखर, धने पूड ,ओवा, हळद व चिंचेचा कोळ घालून छान एकत्र करा. 

*त्यात गरजेनुसार हळूहळू पाणी घालून भाकरीच्या पिठाला भिजवतो त्यापेक्षा थोडे सैल पीठ भिजवा. 

*आता एका ताटलेला चारी बाजूने व मध्यभागी तेल लावून घ्या व त्यात हा गोळा हाताने छान थापा. 

*वरतून पांढरे तीळ घालून छान थापून घ्या. 

*एका मोठ्या कढईत किंवा कुकरमध्ये पाणी घालून ते गरम झाल्यावर, त्यामध्ये स्टॅन्ड ठेवून त्यावर वडीच्या पिठाची ताटली ठेवून वीस मिनिटे वाफवून घ्या.

*गॅस बंद करून टाकली बाहेर काढून घ्या.

*गार झाल्यावर आपल्याला आवडेल त्या आकाराच्या वड्या कापून शॅलो फ्राय करून घ्या.

*मी लोखंडी पॅनमध्ये फक्त तीन टेबलस्पून तेल वापरून छान कुरकुरीत वडी तळून घेतली. 

*अतिशय चवदार चविष्ट अशी अळूची वडी तयार आहे.
