Year 2023 has been declared as *International Year of Millets*

In the today's fast-paced environment we have almost forgot to eat Millets. Our ancestors were eating more Millets besides healthy work life style.

Ragi or Nachani is a best source of Calcium ...fibre..full of energy.

This Burfi is very easy to prepare and delicious to eat...😋😋

Ingredients...

*Ragi flour... 1 Cup

1 Cup ...150 ml

*Milk powder... 1 Cup

*Sugar... 1 Cup

*Water ... 1 Cup

*Home made Ghee ... 1/2 Cup

*Cocoa powder... 1/2 Cup

*Chopped dryfruits... 1/2 Cup optional

*Vanilla essence... 1 TSP

Method...

*In a thick based pan or kadhai mix Ragi flour, cocoa powder, milk powder, sugar and ghee properly.

*Then add water gradually and mix properly without forming lumps.

This process we are doing without keeping the pan on gas.

*Now keep the kadhai on gas at lower flame. To begin with keep stirring occasionally, but when sugar will dissolve, add Vanilla essence and mix properly.

Keep stirring continuously, so that lumps should not form. Take care that this batter

should not stuck to the bottom of the kadhai.

*This complete process should be done on lower gas flame only.

After sometime batter will start leaving the sides of the kadhai, keep stirring, when it becomes a nice big lump in the center, switch off the Gas.

*Spread this batter in a pre greased plate or tray. Spread chopped dryfruits. Here I have used Walnuts and Cashews. You can use any dryfruits of your choice or skip using dry fruits.

*Let this cool, when it cools completely, cut the Burfi.

*Refrigerate for longer shelf life.

 नाचणी बर्फी

 2023 हे वर्ष *International Millets Year* म्हणून घोषित करण्यात आले आहे.

 आजच्या वेगवान वातावरणात आपण बाजरी, ज्वारी, नाचणी,भगर अशी धान्य खाणे जवळजवळ विसरलो आहोत.  

आपले पूर्वज मात्र ही सगळी धान्य भरपूर प्रमाणात खात, सोबत भरपूर प्रमाणात कष्टाची कामे करत, त्यामुळे त्यांचे आरोग्य उत्तम राहत असे.

नाचणी या धान्यात कॅल्शियम...फायबर..उर्जेचा उत्तम स्रोत आहे.

आज नाचणी ची बर्फी कशी करायची ते पाहू या...

 ही बर्फी तयार करायला खूप सोपी आणि खायला चविष्ट आहे...😋😋

 

 साहित्य...

 *नाचणीचे पीठ... 1 वाटी

 1वाटी ...150 मि.ली

 *दूध पावडर... 1 वाटी

 *साखर... १ वाटी

 *पाणी... १ वाटी

 *घरी बनवलेले तूप... १/२ वाटी

 *कोको पावडर... १/२ वाटी

 *चिरलेला सुका मेवा... १/२ वाटी ऐच्छिक

 *व्हॅनिला इसेन्स... 1 टीस्पून

 पद्धत...

 *जाड बुडाच्या कढईत किंवा पसरट भांड्यात नाचणीचे पीठ, कोको पावडर, दूध पावडर, साखर आणि तूप व्यवस्थित मिसळा.

 * नंतर हळूहळू पाणी घाला आणि गुठळ्या न होता व्यवस्थित मिसळा.

 ही प्रक्रिया आपण गॅसवर कढई न ठेवता करत आहोत.

 *आता कढई गॅसवर मंद आचेवर ठेवा. सुरुवातीला अधूनमधून ढवळत राहा, साखर विरघळल्यावर त्यात व्हॅनिला इसेन्स घाला आणि व्यवस्थित एकत्र करा. नंतर मात्र

 सतत ढवळत राहा, म्हणजे गुठळ्या होऊ नयेत याची काळजी घ्या

 कढईच्या तळाशी लागते नाही तर .

 *ही संपूर्ण प्रक्रिया कमी गॅसच्या आचेवरच करावी.

 काही वेळाने पीठ कढईच्या बाजूने सुटू लागेल, सतत ढवळत राहा, मधोमध छान मोठा गोळा झाल्यावर गॅस बंद करा.

 * आधीच तुप लावून ठेवलेल्या ताटली किंवा ट्रेमध्ये पसरवा. चिरलेला सुका मेवा पसरवा. येथे मी अक्रोड आणि काजू वापरले आहेत. तुम्ही तुमच्या आवडीचे कोणतेही ड्रायफ्रुट्स वापरू शकता किंवा ड्रायफ्रुट्स वापरणे वगळू शकता.

 *हे थंड होऊ द्या, पूर्णपणे थंड झाल्यावर बर्फी कापून घ्या.

 *जास्त टिकण्यासाठी फ्रीजमध्ये ठेवावे. अप्रतिम लागते.
