#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Very tasty and healthy option for breakfast, lunch, dinner. While serving at lunch or dinner serve with dal and chawal to make it a complete meal. 

Ingredients...

*Washed and chopped spinach...3cups

1 Cup...150 ml

*Green chillies...4

*Garlic pods...8

*Grated ginger...1 tsp

*Wheat flour... 2 cups

*Oil for dough...6 tsp

*Oil for roasting paratha...3 tbsp

*Salt...1.5 tsp

*Sesame seeds...2 tsp

Method...

*In a kadhai add chopped spinach, green chillies, garlic and ginger, cook on a gas without adding water, till water evaporates.

Let it cool and grind from the mixer by adding 2 tbsp water.

•In a wide based pan take wheat flour,add 6 tsp oil and salt, mix it properly with the help of hands. Add spinach puree and make a dough. Use water if necessary, dough should not be too tight, it should be soft. Apply 2 tsp oil to a dough.Cover with a lid, and keep it atleast for 20 minutes.

*Make 7-8 equal size ball. Take one dough, flatten it with the help of your hand, spread few sesame seeds, and roll out the paratha of 7-8". Use minimum wheat flour for dusting.

*Heat iron tawa or griddle on medium flame.Place the rolled paratha and flip after 30 seconds. Let the bottom side roast complete and flip it, spread one tea spoon oil on roasted side, flip and same way roast other side too.

In this way prepare all Paratha s.

*Serve with pickle, curd or Raita.

Here I have served with spicy Mango Pickle and Carrot, cucumber, apple raita.

नाश्ता, दुपारचे जेवण, रात्रीच्या जेवणासाठी अतिशय चवदार आणि आरोग्यदायी पर्याय.  दुपारच्या किंवा रात्रीच्या जेवणात वरण भातासोबत  सर्व्ह करा. जेणेकरून परी पूर्ण जेवण होईल.
साहित्य...
*पालक धुऊन चिरलेला...३ कप
१ कप...१५० मि.ली
*हिरव्या मिरच्या...4
*लसूण पाकळ्या...8
* किसलेले आले... 1 टीस्पून
*गव्हाचे पीठ... २ वाट्या
*पीठ भिजवण्यासाठी तेल...६ टिस्पून 
*पराठा शेकण्यासाठी तेल...३ टेबलस्पून 
*मीठ...1.5 टीस्पून
*तीळ...२ टीस्पून
पद्धत...
*एका कढईत चिरलेला पालक, हिरवी मिरची, लसूण आणि आले घालून पाणी न घालता गॅसवर शिजवा, पाणी  आटे पर्यंत शिजवून घ्या.
गार होऊ द्या आणि मिक्सरमधून २ चमचे पाणी घालून बारीक वाटून घ्या.
• एका परातीत गव्हाचे पीठ  /कणिक घ्या , त्यात 6 टिस्पून तेल आणि मीठ घाला, हाताच्या मदतीने ते व्यवस्थित मिसळा.  पालकाचे वाटण  घालून पीठ भिजवून घ्या.  आवश्यक असल्यास पाणी वापरा, पीठ जास्त घट्ट नसावे, ते मऊ असावे.वरून  कणकेला २ चमचे तेल लावा. झाकणाने झाकून ठेवा आणि किमान २० मिनिटे ठेवा.
* 7-8 समान आकाराचे गोळे बनवा.  एक गोळा घ्या, हाताच्या साहाय्याने चपटा करा,त्यावर थोडे तीळ पसरवा आणि थोडी पिठी लावून 7-8 " इंचाचा पराठा लाटून घ्या. लाटताना कमीत कमी गव्हाचे पीठ वापरा.
* लोखंडी तवा मध्यम आचेवर गरम करा.  त्यावर पराठा घालून आणि 30 सेकंदांनी उलटा.  खालची बाजू पूर्ण भाजू द्या आणि उलटून घ्या., भाजलेल्या बाजूवर एक चमचा तेल पसरवा, उलटा आणि त्याच प्रकारे दुसरी बाजू देखील भाजून घ्या.
अशा प्रकारे सर्व पराठे तयार करा. गॅस मध्यम आचेवर असावा.
* लोणचे, दही किंवा रायत्यासोबत सर्व्ह करा.
येथे मी मसालेदार कैरीचे लोणचे आणि गाजर, काकडी, सफरचंद रायत्या सोबत सर्व्ह केले आहे.
