Ambadi Bhakari

This is a very tasty and healthy preparation.

This is a traditional recipe from Maharashtra especially Vidarbha region.

Easy and tasty.... Complete meal.

Ingredients...

1 cup... 150 ml

*Ambadi leaves... Washed and finely chopped 2 cups

*Jawar flour... 1 cup

*Wheat flour...1 cup

*Garlic cloves...4

*Green chillies.. 2-3

*Salt...1 tsp

*Cumin seeds...1/4 tsp

*Turmeric powder... 1/4 tsp

*Water for binding a dough.

*Wheat flour for dusting the Bhakari while rolling.

Method...

*Clean the Ambadi, take only leaves. Stems are very hard. Wash the leaves atleast 3-4 times in the sufficient water.

*Drain out the water and chopp the leaves finely. Chopped leaves should be 2 cups approximately. In a heavy based steel pan put all the chopped leaves.

*Put this pan with the leaves on a medium flame gas, stirring constantly with the help of a spoon. Within 2-3 minutes it will get cooked and it's colour will also change.

Switch off the gas and let it cool.

*Chopp the green chillies, garlic, add cumin seeds and grind coarsely with the help of a mortar or rolling pin.

*In a wide based pan add Jawar and wheat flour, cooked Ambadi leaves, chilli garlic paste, Salt, Turmeric powder and mix well. Add water gradually and make a tight dough. Let this dough rest for 10 minutes.

*After 10 minutes divide this dough between 6-7 equal portions.

*Roll out the Bhakari with the help of rolling pin , using wheat flour for dusting so that it should not stuck. It should be little thicker than roti.

*Place this bhakari on a already pre heated tawa. Flip the bhakari after 30 seconds, let the one side cook completely. The gas flame should be high. Keep checking occasionally. When one side is cooked, cook the other side directly on a high flame gas.

*In this way prepare all the bhakari.

*For tadka

*Heat 3 table spoon oil in a takka pan, add 1 tsp mustard seeds, let it splutter. Switch off the gas after it stops spluttering.

*For serving...

*Place one bhakari in a plate. Spread atleast one teaspoon of tadka on the bhakari evenly. Serve with roasted peanuts, jaggery, chilli pickle and onion 🧅.

*This is a complete healthy tasty meal.

*Enjoy 😊
