#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Crispy Potato Veg
This is a typical Maharashtrian veg preparation called as  बटाट्याच्या काचऱ्या....
Which means finely chopped  Potatoe slices sauted till  crispy and added with basic  spices.
This preparation is liked by one and all  & goes well  with hot Roti as well as Dal Rice.
Very simple to prepare yet very tasty 😋 😋.
Shrikhand gives a nice accompaniment to this Roti...Veg combination....
Ingredients...
*Potato...500 grams
*Oil...8 tbspn
*Red Chilli Powder...1.5 TSP
*Salt...1 TSP
*Turmeric Powder...1/4 tsp
*Asafoetida Powder...1/4 tsp
*Mustard n Cumin Seeds...1/4 tsp each.
Method...
*Wash thoroughly the Potatoes by keeping them in water. We are going to slice  them with peels. So see that they are cleaned properly.
*Slice them in quarter of same equal size slices.
*Heat the Iron Kadhai... Iron Kadhai gives better results...
*Add Oil, Mustard Seeds n Cumin Seeds.
*After they splutter add Asafoetida powder, Turmeric Powder and sliced Potatoes.
*Saute them on medium flame, stirring occasionally till all slices are crisp.
*Please take care if you will saute frequently they may become mushy. *Let it be little golden & then saute...in this way all slices will be perfectly crisp.
*Add Red Chilli Powder and Salt.
Mix properly... switch off the gas.
*Serve hot with Roti and Shrikhand.
*Goes well with simple Dal Rice too.

खमंग कुरकुरीत बटाट्याच्या काचऱ्या... पोळी व श्रीखंड... किंवा आमरस... अहाहा 😋😋😋😋
ही भाजी  म्हणजे आपल्या महाराष्ट्राची खासियत...
पण दिसायला सोपी वाटणारी ही भाजी नीट नाही केली तर लचका होते... फोडी कुरकुरीत नाही लागत... तशी भाजी होऊ नये म्हणून काय काळजी घ्यायची ते इथे सांगितले आहे...
साहित्य...
*बटाटे....500 ग्राम
*तेल ....8 टेबलस्पून
*तिखट....1.5 टीस्पून
*मीठ....1 टीस्पून
*हळद....1/4 टीस्पून
*हिंग....1/4 टीस्पून
*मोहरी व  जिरे...1/4 टीस्पून प्रत्येकी
कृती...
*बटाटे पाण्यात बुडवून ठेवून स्वच्छ धुऊन घ्या.
बटाटे छान साफ झाले पाहिजे, वरील माती चोळुन चोळुन धुऊन काढा. आपण भाजी सालासकट करणार आहोत.
*बटाट्याचे चार भाग करून एकसारख्या जाडीच्या काचऱ्या / फोडी करून घ्या.
*ही भाजी लोखंडी कढईत जास्त छान होते... तेंव्हा शक्यतोवर तीच कढ‌ई घ्या.
*एका लोखंडी कढईत तेल तापवून त्यात मोहरी व जिरे घालून तडतडल्यावर हिंग व हळद घालून बटाट्याच्या फोडी घालून परतावे.
*मध्यम आचेवर एका बाजूला सोनेरी रंग आला की मग परतावे... परतण्यात घाई केली की लचका होतो.
*प्रत्येक फोड कुरकुरीत झाली की तिखट व  मीठ घालून छान एकत्र करून घ्या.
*गॅस बंद करावा.
*गरमगरम भाजी पोळी किंवा वरणभाता सोबत मस्त लागते.
