#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Achari Baingan
This is the recipe my Mother prepares in every summer.
But now a days we can get nice Purple Green Brinjals throughout the year.
They are very Tangy and since no water is used ,will last for 2..3 days..
Ingredients...
Purple Green Small Brinjals.. 250  gms...
Chopped Coriander... 2 tbspn
Coriander Powder..4 tablespoon
Red Chilly Powder... 2 tsp
Raw Mango /Aamchur Powder ...1 tsp
Salt ...1 tsp
Sugar... 1/2 tsp
Fenugreek Seeds Powder... 1/4 tsp 
Asafoetida Powder... 1/4 tsp
Oil ...6 tbsp
Method...
*Slit cross the Brinjals keeping the bottom intact.
*Mix all the ingredients except Oil.
 *Stuff them in Brijals...keep the left over masala aside...
*Heat the Oil in an lron kadhai, place the Brinjals carefully .
*Cook them on low flame for 3..4..minutes stirring occasionally.
*Cover with the lid n cook on low flame till soft...add leftover masala...mix n cook for 2..3 mts. Sprinkle a fistful of waster. Cover and cook till water evaporates.
Done.
*Serve with Roti, Jawar Bhakari or Dal Rice

हो ,वांग्याचे लोणचे !!!
अगदी बरोबर वाचलत तुम्ही ,माझी आई हा  प्रकार उन्हाळ्यात करायची, पण आजकाल बाराही महिने सुंदर काटेरी जांभळी व हिरवी रेषांची वांगी मिळतात.
तेंव्हा बघु या वांग्याचे लोणचे...
या भाजी मध्ये आपण कांदा किंवा पाणी अजिबात वापरले नाही आहे त्यामुळे ही भाजी दोन-तीन दिवस उत्तम टिकते.
साहित्य ...
*जांभळी व हिरवी रेषांची छोटी छोटी वांगी... 250 ग्राम
*कोथिंबीर चिरून...2 टेबलस्पून
*धने पूड ... 4 टेबलस्पून
* लाल तिखट... 2 टीस्पून
*मीठ...1 टीस्पून
*आमचूर पावडर...1  टीस्पून
* साखर ...1/2 टीस्पून
*मेथी पूड ...1/4 टीस्पून
*हिंग पावडर...1/4  टीस्पून
*तेल... 6 टेबलस्पून
कृती...
*प्रथम वांगी स्वच्छ धुवून त्याला खालील टोक तुटणार नाही अशी काळजी घेऊन चिरा देऊन घ्या. क्रॉस किंवा फुली आकाराचे.
*तेल सोडून बाकी सर्व साहित्य एकत्र करून घ्या.
*सगळा मसाला छान एकत्र करून वांग्यात मध्ये काळजीपूर्वक भरून घ्या.
*उरलेला मसाला बाजूला ठेवून द्या.
*आता एका लोखंडी कढईत तेल तापवुन त्यात मसाला भरलेली वांगी काळजीपूर्वक ठेवा किंवा लावा.
*हळुवार हाताने 3..4 मिनिटं परतून घ्या.
*नंतर त्यावर झाकण ठेवून मंद आचेवर, वांगी म‌उ होईपर्यंत शिजू द्या.
*मग उरलेला मसाला घालून पुन्हा दोन-तीन मिनिटं शिजू द्या.
मुठभर पाणी शिंपडावे व झाकण ठेवून मंद आचेवर पाणी आटे पर्यंत शिजवून घ्या. नंतर गॅस बंद करा.
*आपली चवदार भाजी तयार ...,😋
ही भाजी पोळी, भाकरी अथवा वरण-भात कशा सोबतही छान लागते.
