These seasonal vegetables is called as "रानभाजी" Since this vegetable is very healthy one should eat it at least once in the rainy season . It cures indigestion as well as it helps to increase appetite.  Very tasty and easy to prepare. You can get these vegetables  in the local market in rainy season. In some areas this veg is also called as "गुनगुण्याची भाजी" Ingredients  1 Cup...150 ml *Patur Veg... finely chopped...3 cups *Yellow moong dal... 1/2 Cup  *Garlic pods... 6 *Oil... 4 tbspn  *Mustard seeds... 1/2 tsp  *Turmeric powder... 1/2 tsp *Red chilli powder... 1/2 tsp  *Salt... 1/2 tsp  *Lemon juice... 1 tsp  *Chopped coriander... 1 tbspn  *Grated coconut... 1 tbspn  Method... *Wash and soak yellow moong dal in sufficient water for 2 hours. *Here I have taken 2 bundle s of Patur Veg. Clean and take leaves only. Wash it thoroughly and chop finely.

This Potato Masala preparation is without Onion and Garlic.
Still very tasty and goes very well with hot Poori, Paratha, Roti and Rice too....
Very easy and quick to prepare still full of flavours, with goodness of Ghee.
Ingredients....
*Boiled and diced Potatoes.... 3 Cup
1 Cup...150 ml
*Oil...4 tbspn
*Cumin seeds... 1 tsp
*Asafoetida powder... 1/2 tsp
*Turmeric powder... 1/4 tsp
*Chilli flakes... 1 tsp
*Green chillies... 2 chopped
*Salt ... 1 tsp
*Homemade Ghee... 1 tbspn
*Hot water... 2 Cup
Method...
*Heat Oil in a pan, add Cumin seeds when it crackles, add Asafoetida powder, Turmeric powder and mix well.
*Add green chillies and Potatoes.
Mix well, add Chilli flakes and Salt, mix well, saute on medium flame stirring occasionally atleast for 3..4 minutes.
*Add  Ghee, mix properly.
*Then add 2 cups hot water, let it cook further for 2...3 minutes.
*Switch off the Gas.
*Garnish with chopped coriander and serve.
Note.... You can use red chilli powder instead of Chilli flakes.
But chilli flakes tastes differently.
You can prepare it at home too.
Just crush the dry Red Chillies in Morter or grind roughly from the mixer.
*Serve hot with Poori, Paratha, Roti or Rice.

बटाट्याची मसालेदार भाजी

या बटाट्याची मसालेदार भाजी कांदा आणि लसूण न घालता केली तरी पण अतिशय चवदार आहे.

 गरमागरमगरम पुरी, पराठा, पोळी आणि भातासोबत पण खुप छान लागते....

साजूक तुपाचा गंध असलेली ही भाजी अतिशय अप्रतिम लागते.... 

 साहित्य ....

 *बटाटे उकडून, सोलून छोटे चौकोनी तुकडे करून... 3 वाटी

 1वाटी ... 150 मि.ली.

 * तेल ... 4 टेबलस्पून

 * जिरे ... 1 टीस्पून

 * हिंग पावडर ... 1/2 टीस्पून

 * हळद ... 1/4 टीस्पून

 *चिली फ्लेक्स ... 1 टीस्पून

 *हिरव्या मिरच्या ... 2 चिरून घ्या

 *मीठ ... 1 टीस्पून

 *साजूक तूप... 1 टेस्पून

 * गरम पाणी ... 2 वाटी

 कृती...

*कढईत तेल गरम करून त्यात जिरे घालून छान तडतडले की त्यात हिंग, आणि हळद घाला.

*मग हिरवी मिरची आणि बटाट्याच्या फोडी घाला. त्यात चिली फ्लेक्स आणि मीठ घालून चांगले एकत्र करावे. मध्यम आचेवर 3.....4 मिनिटे परतून घ्या. मग तुप घालून छान एकत्र करावे.

*नंतर त्यात 2 वाटी गरम पाणी घालून, 2 ... 3 मिनिटे शिजू द्या.

*गॅस बंद करा.

 * चिरलेली कोथिंबीर घालून सर्व्ह करा.

 टीप .... आपण चिली फ्लेक्सऐवजी लाल तिखट वापरू शकता. पण चिली फ्लेक्सची चव वेगळी असते.

 आपण चिली फ्लेक्स घरीही तयार करू शकता.

 फक्त खलबत्त्यात कोरड्या लाल मिरच्या जाडसर भरडून किंवा मिक्सरमधून जाड भरड वाटून घ्या.

 * पूरी, पराठा, पोळी किंवा भाताबरोबर गरम सर्व्ह करा.
