#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Masala Brinjal

Brinjal Masala when prepared with different combinations of Masala tastes yummy n liked by one and all.
You can prepare it for your daily Meals, when Guests are coming or even as a party Dish too.
Only the care to be  taken is proper use of Masala and Oil.

Ingredients...
*Small Brinjals... 250 gms slit into cross..
*Roasted Groundnut Powder...1 tbsp *Coconut Powder...1 tbsp
*Roasted Seasame seeds powder...
1 tbsp
*Onions... 2 chopped
*Grated Ginger....1 tsp
*Garlic cloves...4
*Green Chillies...4
*Coriander chopped...2 tbsp
*Tamarind Pulp ...2 tbsp
*Gooseberry size Jaggery. ..2 tsp  *Coriander Seeds Powder...2 tsp
*Cumin Seeds Powder...1/2 tsp
*Red Chilli Powder...1 tsp
*Turmeric Powder...1/2  tsp
*Salt...1 tsp
*Oil...2 tbsp
*Mustard Seeds...1/4 tsp
Method...
*Make a fine paste of chopped Onions, Coriander, Green Chillies, Ginger and Garlic without adding water.
*Heat  1 tbsp Oil in the Kadhai...add slitted Brinjals... saute them till soft n Golden in colour... keep aside.
*Add remaining 1  tbsp Oil in the same Kadhai, add the  Mustard Seeds, after it splutters add Onion paste, saute on low flame till Oil is released from the sides of the pan.
*Add Turmeric Powder, Red Chilli Powder, Coriander Seeds Powder, Cumin Seeds Powder...mix properly and cook for 3 minutes.
*Add Coconut, Peanuts and Seasame Seeds powder...mix properly and cook for 2 minutes.
*Add already sauted Brinjals, Tamarind Pulp and Jaggery.cup
*Add 1 cup hot water and cook on low flame for 3..4 minutes.
*Done.
*Serve hot with Roti, Bhakari or Dal Rice...
*Note...All cooking to be done on low flame.

फक्त मसाला नीट झाला पाहिजे... तुम्ही भाजी रोजच्या जेवण्यासाठी ,विशेष पाहुणे आल्यावर किंवा अगदी पार्टीचा मेनू म्हणून सुद्धा करू शकता...
गरम गरम पोळी, भाकरी, वरण-भात तुप कशासोबतही ही भाजी छान लागते...

साहित्य...
*छोटी हिरवीगार वांगी... एक पाव.
*कांदे...2
*हिरवी मिरची... चार
*लसूण पाकळ्या... 4
*आले किस...1 टी स्पून
*कोथिंबीर चिरून... दोन टेबल स्पून *भाजलेल्या शेंगदाण्याचा कूट... एक टेबलस्पून
*खोबर्‍याचा किस ...एक टेबल स्पून
*भाजलेल्या तिळाचा कुट...1 टेबल स्पून
*चिंचेचा कोळ ...दोन टेबलस्पून
*गुळ...छोट्या लिंबाएवढा
*तिखट... एक टीस्पून
*धणेपूड... एक टीस्पून
*जीरे पुड...1/2 टीस्पून
*मीठ...1 टीस्पून
*हळद...1/2 टीस्पून
*मोहरी...1/2 टीस्पून
*तेल...2 टेबलस्पून
कृती...
*कांदा ,मिरची ,कोथिंबीर ,आले व लसूण एकत्र करून मिक्सर मधून वाटून घ्या. पाणी शक्यतो घालू नका.
*वांग्यांना + च्या आकारात   देठ न चिरता कापून घ्या.
*एका कढईत 1 टेबलस्पून तेल तापवून, वांगे मंद आचेवर परतून घ्या छान सोनेरी रंग आला पाहिजे. वांगे काढून बाजूला ठेवून द्या.
*कढईतील उरलेल्या तेलात अजून एक टेबलस्पून तेल घाला व मोहरी घालून तडतडल्यावर वरील कांद्याचे वाटण घाला ,मंद आचेवर बाजूने तेल सुटेपर्यंत परतून घ्या.
*नंतर त्यात हळद, तिखट ,धने पूड  व जिरेपूड घालून तीन मिनिटे परता
*मग त्यात खोबर्‍याचा किस, दाण्याचा व तिळाचा कूट घालून एकत्र करून अजून दोन मिनिटे परता
*परतलेले वांगे ,चिंचेचा कोळ व गूळ घाला, मग एक वाटी गरम पाणी घाला मंद आचेवर तीन-चार मिनिटे शिजू द्या.
*आपली भाजी तयार आहे...
*गरम गरम पोळी ,भाकरी ,वरण-भात कशासोबतही छान लागते.
टीप...
पुर्ण भाजी ही मंद आचेवरच करावी म्हणजे चव सुंदर येते.
