#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Green Garlic Neer Dosa
This simple but Yummmm Breakfast is the signature dish of Vidarbha region.
When new crop of Rice arrives in the market, this dish is prepared.
This dish is called as "आयते"...
By using lot's of green Garlic this is prepared. Green Garlic is the Hero of
this Dish...
Every household has their unique Recipe of preparing this..

Ingredients...
* Raw Rice ...1cup
1 Cup...150 ml 
*Fresh Green Garlic chopped...1/4 Cup
*Green Chillies..3
*Grated Ginger...1 tsp
*Chopped Coriander...1/4 cup
*Salt...1 tsp
*Oil ...1/4 th Cup
*Water...2 Cups
Method...
*Wash and soak the Rice for 3 hours.
*Drain the water from soaked Rice.
*Mix all the ingredients except Oil and Water.
*Grind to a smooth paste using minimum water.
*Pour the mixture in a pot, add remaining Water..we have to use 2 Cups of water including used in grinding.
*Heat the Iron Tawa for 3 minutes on medium flame, spread the Oil and let it heat.
*Now pour the Dosa batter, starting from out to inner side, remember we have to just pour, do not spread with the help of spoon like we do for Dosa.
*Drizzle with Oil and cover with the lid for two minutes.
*After two minutes, remove the lid, flip it carefully and cook from another side too.
*While making next Dosa, take care to mix batter from it's bottom.
*No need of Chutney...
*You can serve with Butter or Curd.
*It tastes very tasty without any accompaniment.
Note... You can pour the batter from centre of the Tawa to outer space also.

आयते
"आयते" ,म्हणजेच नवीन तांदुळाच्या पिठाचे हिरवा पातीचा लसूण घालून केलेले "धिरडे किंवा घावन".
विदर्भात काही भागात याला "आक्षे" असे पण म्हणतात.
हा पदार्थ विदर्भात प्रामुख्याने जेव्हा नवीन तांदुळाचे पीक येते तेव्हा केला जातो... अतिशय चवदार असा हा नेहमीचा न्याहारी किंवा ब्रेकफास्टचा प्रकार आहे.
घरोघरी हा पदार्थ करायची प्रत्येकाची वेगळी रेसिपी आहे.
मी झटपट व्हावा म्हणून तांदूळ भिजवून वाटून केला आहे...
साहित्य...
*तांदूळ ... एक वाटी
1 वाटी... 150 मिली
*चिरलेली हिरव्या लसणाची पात...1/4 वाटी 
*हिरव्या मिरच्या...तीन
*आले कीस... एक टिस्पून
*कोथिंबीर चिरून ... 1/4 वाटी  
*मीठ ...एक टिस्पून
*तेल... 1/4 वाटी
*पाणी... दोन वाट्या
कृती...
*तांदूळ स्वच्छ धुऊन तीन तास भिजत घाला.
तांदूळ भिजल्यावर यातील सगळे पाणी काढून घ्या.
*नंतर त्यात तेल व पाणी सोडून बाकी सर्व साहित्य एकत्र करा.
*मिक्सरमधून अतिशय कमी पाणी घालून मिश्रण बारीक वाटून घ्या
*वाटलेले मिश्रण एका भांड्यात काढून घ्या व उरलेले पाणी घालून मिक्स करा.. एकत्र करा आपण पूर्ण रेसिपी मध्ये फक्त दोन वाट्या पाणी वापरणार आहोत वाटलेल्या पाण्यासकट.
*लोखंडी तवा गॅसवर तीन-चार मिनिटे कोरडाच तापवा, नंतर त्यावर तेल पसरून दोन मिनिटे गरम होऊ द्या.
*आता घावण्याचे मिश्रण पळीने पूर्ण ढवळून तव्यावर बाहेरच्या गोला कडुन सुरुवात करून आतील भागाकडे पीठ पळीने ओतत जायचे. लक्षात ठेवा आपल्याला पीठ चमच्याने पसरवायचे नाही जसे आपण दोसे करताना पसरवतो  तसे... नाही तर त्याची जाळी येणार नाही. 
*बाजूने तेल सोडा आणि दोन मिनिटे झाकण ठेवून, दोन मिनिटांनी झाकण काढून, तव्यावरुन हळूच पलटवून घ्या.
*दुसऱ्या बाजूने कुरकुरीत करून घ्या
*आपले चवदार आयते तयार आहेत
*गरम-गरम खाल्ले तर अगदी चटणी,  लोणचे ची गरज नाही.
*हवे असल्यास घरी केलेले ताजे दही केव्हा लोणी घेऊ शकता.
टिप... घावने तव्यावर मध्यभागातून बाहेर ओतत गेले तरी चालतील.
