Aluchi Vadi

#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Clean the tamarind and soak it in 1/2 cup of water for 15–20 minutes. Extract the pulp and keep it aside. 2. In a large bowl, combine the chopped colocasia leaves, gram flour, rice flour, red chilli powder, salt, sugar, coriander powder, carom...

Mango Kulfi
Mango season is going on...
Market is flooded with different varieties of  delicious sweet  Mangoes.
This creamy soft Mango Kulfi can be prepared very quickly with all material easily available in the home...
My own style Recipe...
Ingredients....
*Full Fat Milk...2 Cups
*Rice flour...2 tsp
*Sugar...1/2 Cup
*Mango Pulp...1 Cup
*Milk Powder....2 Cups
*Green Cardamom Powder...1/2 tsp
*Few strands of Kesar... Optional
Method...
*Take 1/2 Cup Milk in a Pan...mix Rice flour without forming lumps.
*Keep the remaining Milk on the Gas top, when it starts boiling add Rice flour milk.
*Keep stirring constantly till it gets creamy consistency. If you will not stir constantly Rice flour will stick to the bottom of the Pan
*Switch off the gas.
*When it cools mix all ingredients in the Mixer jar and churn it well from the Mixer.
*Pour in Kulfi moulds.
*Keep in the freezer for 8 hours.
*While serving just  rub the mould in your Palms...n take out with the help of a knife in serving bowl.
*Serve with sliced Almonds and Pistachio.
*Here Kesar Mango pulp is used.
*Enjoy.
Note...1) You can adjust Sugar level as per your choice.
2) You can use Corn flour instead of Rice flour. But Rice flour tastes better.
