Gongura leaves are tasty, sour in taste and good for health.
Not only it is reach in fibre but increases hemoglobin and controls blood pressure also.
When prepared with Chick Pea flour it becomes tasty and Protein rich also.
Ingredients...
*Gongura or Sorrel leaves...500 grams
*Oil...8 tbsp
*Chick Pea flour...1 Cup
*Salt...1 tsp
*Red Chilli Powder...1 tsp
*Turmeric Powder...1/2 tsp
*Green Chillies chopped...4
*Garlic cloves... 20
*Mustard Seeds...1/4 tsp
Method...
*Clean the Gongura leaves...take only leaves...do not take stems...wash thoroughly...place in colander...chopp finely.
*Heat Oil in the pan, add Mustard Seeds, after it splutters add chopped Garlic and Green Chillies.
*When Garlic becomes light brown in colour add Turmeric Powder and chopped Gongura leaves.
*Saute on medium flame for 3 minutes.
*Add Red Chilli Powder and Salt...mix properly...it will become soft, will release lot's of water.
*Saute for 2 minutes add Chickpea flour. Mix properly . Cover by lid ... cook for 3 minutes on medium flame.
*Switch off the gas, mix properly.
*Goes very well with Bajra and Jawar Roti. You can have it with wheat flour Roti and Dal Rice also.

साहित्य...
*अंबाडी ची भाजी...500 ग्राम
*तेल...8 टेबलस्पून
*बेसन... एक वाटी
*मीठ... एक टीस्पून
*तिखट... एक टीस्पून
*हळद..1/2 टीस्पून
*हिरवी मिरची चिरून... चार
*लसूण पाकळ्या...20 सोलुन व चिरून
*मोहरी...पाव टीस्पून
कृती...
*अंबाडी स्वच्छ निवडून घ्या. फक्त पाने घ्या, स्वच्छ पाण्याने धुऊन निथळून घ्या. मग बारीक चिरून घ्या.
*कढईत तेल तापवून मोहरी घालून तडतडल्यावर चिरलेली मिरची व लसणाचे तुकडे घाला.
*लसूण गुलाबी रंगावर आला की हळद व चिरलेली अंबाडी ची भाजी घाला.
* दोन तीन मिनिटे परतून घ्या, मग मीठ व लाल तिखट घालून दोन मिनिटे परता. भाजीला खुप पाणी सुटेल.
*भाजीत हळूहळू बेसन घालून एकत्र करावे.
झाकण ठेवून तीन-चार मिनिटे शिजू द्यावे.
*गॅस बंद करा, छान मोकळी भाजी तयार होते.
*बाजरी व ज्वारीची भाकरी, पोळी, वरण भात कशा सोबतही छान लागते.
