#रेणू #रसोई #नारळ #पोहे माझा एका कोकणी मैत्रिणी ची रेसिपी... हे आहेत फोडणीचे पोहे पण कांदा बटाटा काहीही न घालता... अतिशय झटपट व चवदार चविष्ट.... पण घरी खवलेले ओले नारळ मात्र हवे.... कांदा बटाटा घातला नाही तरीही खमंग लागतात.... साहित्य *जाड पोहे ...२ वाटी स्वच्छ धुवून, रोळीत निथळून 1 वाटी... 150 मिली *ओले खोबरे... 3/4 वाटी *हिरव्या मिरच्या... 4 चिरून *कढीपत्त्याची पाने...10-12 *लिंबू रस... 2 टिस्पून *साखर... 1.5 टिस्पून *मीठ... 1.5 टिस्पून *तेल... 3 टेबलस्पून *मोहरी...1/4 टिस्पून *जीरे... 1/4 टिस्पून *हिंग पुड... 1/4 टिस्पून कृती... *कढईत तेलाची मोहरी...जिरे घालून फोडणी झाली की हिंग व हिरव्या मिरच्या, कढीपत्ता घालून पाऊण वाटी ओले खोबरे घालून परतावे, *लिंबू रस व पोहे घालून छान एकत्र करून , झाकण ठेवून वाफ आणावी. *आपले खमंग पोहे तयार... टिप...फोडणीत उडीद डाळ घालून पण करू शकतो.

These khara buns are available in Iyengar Bakery...
After seeing many receipes on Internet I have prepared this taking Hebbar's Kitchen recipe as a base Recipe.
Ingredients
*Maida...2 Cups
*Warm Milk .... ¾ Cup
*Sugar....1 tsp
*Active Dry Yeast....1 tsp
*Salt ..3/4 tsp
For Masala...
*Finely chopped Onion...1/4 Cup
*Chilli flakes...1 tsp
*Red Chilli Powder...1/2 tsp
*Cumin seeds...1 tsp
*Green Chillies...3 finely chopped
*Curry leaves finely chopped....1/2 tsp
*Coriander finely chopped....2 tbspn
*Butter...2 tbspn for dough
*Butter.... 1 tbspn for
Method...
*In a Pan Add 3/4 th Cup warm milk ( not hot milk) , add 1 tsp sugar and 1 tsp active dry Yeast.
*Mix properly, cover and let it rest for 5 minutes, so that Yeast activates.
*After 5 minutes you will find bubbles on the surface, if not keep till bubbles come.
*Take a broad based Pan or Plate
add this fermented Milk.
*Add 2 cup Maida, ¾ tsp Salt and mix properly.
*Then add chopped Onions, Cumin seeds, Chilli Powder, Chilli flakes, chopped Green Chillies, Curry leaves and Coriander.
*Mix properly, make a nice dough.
Then add Milk gradually, I have added 2 tbspn Milk. Knead for 5 minutes. It will become a very sticky dough.
*Knead to a smooth and soft dough.
*Then add 2 tbsp butter and keep kneading till dough becomes non sicky but soft.
*I have kneaded it for 20 minutes.
*After that make a nice dough by folding all the sides to the bottom.
This is called Tucking. This gives a nice non wrinkle shape.
*Let it cover and rest for 1 hour in a warm place to rise.
*After 1 hour, the dough becomes double, indicating it is well poofed.
*Once again punch/ knead the dough to remove bubbles.
*Divide the dough in 9 equal size balls, tuck them properly.
*In a baking tray, place the butter paper, grease it with Ghee or Butter.
Place the balls over it, and cover with a moist cloth for 20 minutes.
They will double in size, in 20 minutes, if not let them get double.
*Preheat the oven at 180 degree.
*Brush the dough with milk gently.
*Place the tray into the preheated oven and bake at 180 degree celcius for 30 minutes, or until the Bun turns golden brown from top.
*It took me 25 minutes to get golden brown colour.
*Rub with Butter for shining and cover with a damp cloth for Five minutes.
*Remove out of baking tray and let them cool.
*Have it with Tea, Coffee at Breakfast or evening.
*Enjoy.
