#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Orange & Pineapple Modak

मोद in Sanskrit means happy.
By eating Modak you will be Happy.
These Orange n Pineapple flavour Modak are very easy to prepare.
Since everything is home made...no fear of adulteration.
Even if you you don't have mould you can prepare it easily.
Various options of flavours are given in the Recipe.
Ingredients...
*Milk Powder...1 Cup
*Milk... 1/2 Cup
*Melted Ghee...2 tsp
*Dessicated Coconut...1/2 Cup
*Powdered Sugar...1/2 Cup
*Orange n Yellow Food Colour...a small pinch... optional
*Pineapple Essence...1/4 tsp
*Orange Essence...1/4 tsp
*Melted Ghee...2 tsp
*Modak Mould...
Method...
*In a heavy bottom Pan or Kadhai mix Milk Powder, Milk & Ghee.
*Put this pan on low flame stirring constantly. Within 3 minutes it will become a lump.
*Let it cool, add Dessicated Coconut Powder n Sugar. Mix properly. Apply Ghee if too sitcky. You can increase Coconut or Sugar proportion.
*Divide this in 2 equal parts.
*In one part add Yellow Food Colour & Pineapple Essence. Mix properly. *In another add Orange Food Colour & Orange Essence. Mix properly.
* Divide each Dough in 15 equal parts.
*Grease the Modak Mould with Ghee, fill the mix. Press with hands, demould, take out carefully.
* In this way prepare all the Modak.
*Refrigerate for longer shelf life.
Note...
1) If you are not having Modak Mould just roll out in the hand, shape like Modak. The centre Modak in the picture is same.
2) You can add Vanilla Essence, instead of these two. Keep it white in colour.
3) You can also add Green Cardamom Powder or Kesar.
4) Add finely chopped dry fruits pieces.

झटपट होतात...व चवदार लागतात 😋😋
मी मुख्य रेसिपी मध्ये अनेक चवीचे मोदक कसे करायचे ते दिलं आहे.
घरी साचा नसेल तरी चालेल...
साहित्य...
*मिल्क पावडर...1 वाटी
*दुध...1/2 वाटी
*पातळ साजूक तूप...2 टिस्पून
*डेसिकेटेड खोबरे कीस...1/2 वाटी
*पिठीसाखर...1/2 वाटी
*पातळ तुप...2 टिस्पून
*पिवळा व केशरी खाण्याचा रंग...एक चिमुट प्रत्येकी... ऐच्छिक
*पाईन‌अॅपल इसेन्स...1/4 टिस्पून
*संत्रा इसेन्स....1/4 टिस्पून
कृती...
* पातळ तुप, मिल्क पावडर व दुध एका जाड बुडाच्या भांड्यात एकत्र करून घ्या.
*मंद आचेवर हे मिश्रण गॅसवर ठेवून सतत हलवत रहा, तीन मिनिटांत छान घट्ट गोळा होतो. हे मिश्रण गार होऊ द्या.
*नंतर त्यात खोबरे कीस व पिठीसाखर घालून छान एकत्र करून गोळा करा.दोन सारखे भाग करा. गरज वाटल्यास अजून खोबरे कीस किंवा पिठीसाखर घाला. गोळा चिकट वाटल्यास तुपाचा हात  लावा.
* एका भागात अननस इसेन्स व पिवळा रंग घालून छान एकत्र करा.
* दुसऱ्या भागात संत्र्याचा इसेन्स व केशरी रंग घालून एकत्र करा.
*मोदक साच्याला तुपात लावून वरील मिश्रण भरून दाबा, मग साच्यातुन हलक्या हाताने मोदक सोडवुन ताटलीत ठेवा.
* फ्रीजमध्ये ठेवून द्या.
टिप...
1) मोदकाचा साचा नसेल तर छान एकसारखे गोळे करून... घट्ट वळून हातानेच मोदकाचा आकार द्या. मध्यभागी जो मोदक आहे तो मी तसाच केला आहे.
2) तुम्ही व्हॅनिला इसेन्स घालून पांढऱ्या रंगाचे मोदक करू शकता.
3) वेलची पूड किंवा केशर पण घालून छान मोदक होतात.
4) सुका मेवा घालून छान होतात.
