#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. There are so many varieties of food in our country that even if you eat one variety every day, you will never end.
Food preparation in Andhra Pradesh is very tasty. Savory dishes are slightly sour and spicy….
 I love these chilli bhaji .... This recipe is based on Vanita Bhat's recipe...I have made a few changes...
 These bhajis are so tasty that there is no need for a separate chutney. If desired, you can serve it with tamarind sweet and sour chutney.
 Ingredients....
 *Chilli...long but not too thick...10
 For stuffing saran/masala
 * Finely chopped onion...1/4 cup
 *Finely chopped coriander....1/4 cup
 *Roasted Peanut powder...1 tbsp
 *Red chilli powder..1/2 tsp
 *Salt...1/4 tsp
 *Tamarind pulp...4 tsp
 *Chopped jaggery..1 tsp
 * Coriander powder...1 tsp
 For the outer covering 
1 Cup...150 ml
 *Besan/ chickpea flour...1 Cup 
 *Rice flour...1/4 cup
 *Salt...1/4 tsp
 *Hing powder...1/4 tsp
 *Ajwain/ Caraway seeds...1/4 tsp
 *Water...1/2 cup
 *Hot oil...for adding in batter...4 tsp
 *Oil... for frying
 Method...
 For cover...
 *Add chickpea flour/Besan flour, rice flour, salt, hing powder, and Ajwain , mix properly.
 * Gradually add water and prepare the batter.. It should not be too thick or too thin. Add some water if needed.
 * Wash and clean the chillies... Slit them in the middle... Take care to keep both the ends intact.
 * Mix all the ingredients for stuffing and mix properly.
 * Stuff this masala in the chopped chillies.
 *Heat oil in an iron kadhai, add 4 tsp hot oil to batter and mix well.
 * Now dip one stuffed chilli in gram flour, and deep fry in hot oil till crispy on medium flame. Fry three to four chillies at a time.
 * Tasty Spicy Chili Bhaji are ready to eat

आंध्रप्रदेशातील जेवण हे थोडे आंबट तिखट अशा चमचमीत चवदार पदार्थांनी समृद्ध आहे....
मला भजी प्रकारात मिरची चे भजे फार आवडतात. हा प्रकार वनिता भट ह्यांच्या रेसिपी वर आधारित आहे...मी थोडेफार बदल केले आहेत...
ही भजी इतकी चवदार आहेत की सोबत वेगळी चटणी वगैरेंची गरज नाही. हवी असल्यास चिंचगुळाची आंबटगोड चटणी सोबत सर्व्ह करू शकता.
साहित्य...
*मिरची... लांब पण फार जाड नको...10
सारण/ मसाला भरण्यासाठी
*कांदा बारीक चिरून...1/4 वाटी
*कोथिंबीर बारीक चिरून....1/4 वाटी
*शेंगदाणे कूट...1 टेबलस्पून
*तिखट...1/2 टिस्पून
*मीठ...1/4 टिस्पून
*चिंच कोळ...4 टिस्पून
*गुळ चिरून..1 टिस्पून
*धनेपूड...1 टिस्पून
वरील आवरणासाठी
*बेसन...1 वाटी
*तांदूळ पीठ...1/4 वाटी
*मीठ...1/4  टीस्पून
*हिंग पूड...1/4 टीस्पून
*ओवा...1/4 टिस्पून
*पाणी...1/2 वाटी
*गरम तेल... मोहन म्हणुन...4 टिस्पून
*तेल... तळण्यासाठी
कृती...
आवरणासाठी...
*बेसन,तांदूळ पीठ,मीठ, हिंग पूड, व ओवा घालून एकत्र करा.
*हळूहळू पाणी घालून पीठ भिजवावे. फार पातळ नको. गरज वाटल्यास थोडे पाणी घालावे.
* मिरची स्वच्छ धुऊन... मधोमध चिरुन घ्या... दोन्ही टोके जुळलेली राहू द्या.
* सारणासाठी चे सर्व साहित्य एकत्र करून छान कालवून घ्या.
*हे सारण कापलेल्या मिरची मध्ये भरा.
*लोखंडी कढईत तेल गरम करावे, त्यातील 4 टिस्पून तेल, भिजवलेल्या बेसन पीठात घालून छान एकत्र करा.
*आता एक एक भरलेली मिरची बेसन पीठात बुडवून, कढईतील तेलात सोडून मंद आचेवर खमंग तळून घ्या. एकावेळी तीन ते चार मिरच्या तळा.
* चवदार खमंग मिरची भजी खायला तयार...
