It cures indigestion as well as it helps to increase appetite.  Very tasty and easy to prepare. You can get these vegetables  in the local market in rainy season. In some areas this veg is also called as "गुनगुण्याची भाजी" Ingredients  1 Cup...150 ml *Patur Veg... finely chopped...3 cups *Yellow moong dal... 1/2 Cup  *Garlic pods... 6 *Oil... 4 tbspn  *Mustard seeds... 1/2 tsp  *Turmeric powder... 1/2 tsp *Red chilli powder... 1/2 tsp  *Salt... 1/2 tsp  *Lemon juice... 1 tsp  *Chopped coriander... 1 tbspn  *Grated coconut... 1 tbspn  Method... *Wash and soak yellow moong dal in sufficient water for 2 hours. *Here I have taken 2 bundle s of Patur Veg. Clean and take leaves only. Wash it thoroughly and chop finely.

Stuffed or Bharavan Karela is one of the favourite Veg in many houses.
But this Recipe is different than what we used to do.We used to Blanch slitted Karela...remove the seeds n pulp ...then stuff the masala.
So all the nutrients get dissolved...
This recipe I have learnt from my friend in Punjab where no seeds are being removed.
To make it Protein rich I have added roasted peanuts powder & Coconut.
Ingredients....
•Karela / Bittergourd Palm size but tender... 250 gms
 •Onions finely chopped...2
• Green Chillies chopped...3
•Grated Ginger ... 1/2 tsp
•Grated Kairi /Raw Mango...1/4 cup
•Or Aamchur /Dried Raw Mango Powder 1 tsp
 •Chopped Coriander...2 tbsp 
•Grated Coconut... 2 tbsp 
•Roasted peanut powder... 2 tbsp
•Coriander seeds powder... 1 tbsp 
•Red Chilly Powder ....1 tsp
•Salt ....1 tsp
•Turmeric  Powder...1/2 tsp
•Cummin seeds powder.... 1/2 tsp 
•Oil ... 4 tbspn
• Saunf/Aniseeds.... 1 tsp (optional)
•Khuskhus / Poppy seeds ... 1 tsp (optional)

Method...
•Wash n slit the Karela's keeping two ends intact..
•Some people scrap the outer skin.. I have not..you may if you wish
•Heat oil in a pan, preferably iron pan ....put all the Karela's
•Let them fry on low flame... turning in between...they should become soft n tender
•Keep them aside
•Heat remaining Oil in a pan add Turmeric Powder ,Grated Ginger and Poppy seeds....
•Then add chopped Green Chillies n Chopped Onions.
•Saute till Onions become soft.
•Add Red Chilly Powder ,Aniseeds, coriander and Cummings seeds powder.
•Also add grated Raw Mango Or Aamchur Powder n Salt and mix well.
•Add Grated Coconut, roasted peanuts powder, and saute for 2 minutes.
•Switch off the gas.Add Chopped Coriander.
•Mix all well.
•Stuff this masala in already fried Karela's /Bittergourd.
•You can  spread the leftover masala at the end.
•Done...
Goes well with Roti, Dal Rice...
Easy to carry in travel too...

मसाला भरलेली कारली
कारल्याची भाजी ची ही पद्धत आमच्याकडे सगळ्यांनाच  फार आवडते.
 ही पध्दत मी  लहानपणापासून खात आली आहे त्यापेक्षा  वेगळी आहे .आम्ही कारल्याला चीर देऊन उकळत्या पाण्यात पाच मिनिटे शिजवून  मग त्यातील बिया काढून मसाला भरून भाजी करायचो त्यामुळे त्यातील बिया खाण्यात येत नव्हत्या. सत्व निघून जायचे .
हा प्रकार मी पंजाब मध्ये गेली असताना शिकलेली आहे.
यामध्ये मी थोडा बदल केला आहे नुसतीच भाजी पोळी खाता यावे व त्यात प्रथिने असावी म्हणून शेंगदाणे आणि खोबरे यांचा वापर केला आहे.
ही भाजी पाण्याच्या वापर नसल्यामुळे बरेच दिवस टिकते व प्रवासातं पण नेता येते.
साहित्य
*तळहाताएवढी लांब कोवळी कारली ...एक पाव
*कांदे चिरून... 2
*हिरव्या मिरच्या चिरून... 3
*आले कीस... 1/2 टीस्पून
*कोथिंबीर चिरुन ...2 टेबलस्पून 
* सुके खोबरे किसून... 2 टेबलस्पून 
*भाजलेल्या शेंगदाण्याचे कूट... 2 टेबलस्पून 
*धनेपूड... 1 टेबलस्पून 
*आमचूर पूड .. ..1 टिस्पून
 *तिखट ...1 टीस्पून
 *शोप ... 1 टीस्पून (ऐच्छिक)
* खसखस... 1 टीस्पून (ऐच्छिक)
 *मीठ... 1 टीस्पून
*हळद...  1/2 टीस्पून
*जिरेपूड... 1/2 टिस्पून 
 *तेल .... 4 टेबलस्पून
कृती
 *कारले स्वच्छ धुवून दोन्ही बाजूची टोके तोडून मधोमध चीर द्या.
*तुम्हाला कडवटपणा कमी हवा असेल तर तुम्ही वरचे साल खरवडून काढू शकता पण मी काढले नाही आहे .
*एका लोखंडी कढईत  तेल गरम करा, त्यात चिरलेली कारली टाका ,अधून मधून परतून झाकण ठेवा कारले मउ झाले पाहिजे आणि चारी बाजूंनी सारख्या रंगाचे शिजले पाहिजे.
*कारले एका बाजूला काढून ठेवून द्या .आपण यात कारल्याच्या बिया काढल्या नाही आहेत.
*नंतर त्याच कढईत उरलेल्या  तेलात  हळद, आले किस व खसखस घाला .
*चिरलेली हिरवी मिरची व कांदा घालून खमंग होईपर्यंत परतून घ्या .
*तिखट ,मिठ ,शोप, धनेपूड, जिरेपूड आणी आमचूर पण घाला .* मग भाजलेल्या शेंगदाण्याचे कूट व खोबरे किस घालून छान एकत्र करून 2 मिनिटे परतावे.
*सगळे नीट खमंग झाले की गॅस बंद करून त्यात चिरलेली कोथिंबीर घाला.
*हे मिश्रण कारल्यामध्ये भरा
*आपली मसाल्याची कारली तयार आहेत.
*जर मसाला थोडाफार उरला असेल तर कारल्याच्या सोबत तो तसाच खाऊ शकता.
*पोळी किंवा गरम वरण भाता सोबत  याचा आनंद घ्या.

Wash and cut in big pieces. While serving at lunch or dinner serve with dal and chawal to make it a complete meal.  Ingredients... *Washed and chopped spinach...3cups 1 Cup...150 ml *Green chillies...4 *Garlic pods...8 *Grated ginger...1 tsp *Wheat flour... 2 cups *Oil for dough...6 tsp *Oil for roasting paratha...3 tbsp *Salt...1.5 tsp *Sesame seeds...2 tsp Method... *In a kadhai add chopped spinach, green chillies, garlic and ginger, cook on a gas without adding water, till water evaporates. Let it cool and grind from the mixer by adding 2 tbsp water. •In a wide based pan take wheat flour,add 6 tsp oil and salt, mix it properly with the help of hands. Add spinach puree and make a dough.
