#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Idli
Idli is basically a South Indian dish. But loved by one and all.
It can be a Breakfast, Dinner, Lunch or even Party Snacks.
Eating Soft and fluffy Idlis is just a joy....🙂
Let's see today, how to make it at home.
Ingredients...
Raw Rice....3 Cups
Udad Dal...1 Cup
Beaten Rice/Poha... 1 Cup
Fenugreek seeds...1 tsp
Fenugreek seeds are optional.
Salt.. 4 tsp
Oil for greasing..5 TSP
Method...
*Wash Rice and Dal thoroughly, n soak it in water along with Poha for 5..6 hours. Add Fenugreek seeds if you wish so. I have added.
*Grind it from the mixer little coarsely.
*Consistency should be thick like Pakoda Batter, just pouring one.
*Let it ferment overnight or 7..8 hours.
*Add Salt and mix properly.
*Keep the steamer or cooker on a gas by adding water in it.
*Grease the Idli mould with Oil.
*Put 1tablespoon Idli batter in each mould.
*Place the Idli mould stand in preheated steamer or Cooker. Do not use pressure or whistle for steaming.
*Steam it for 10 minutes.
*Check by pricking with knife, if it turns out dry, done.
*Repeat the same process for the remaining batter.
*Eat it with Sambar n Chutney.

इडली
इडली हा मुख्यतः दक्षिण भारतातील पदार्थ आहे. पण आता आपण सगळेच जण आवडीने खातात.
इडली ही उत्तम जमली तरी खायला मजा येते, पीठ खूप आंबट पण नको, पण बेचव पण नको.
इडली घट्ट नको, म‌उ लुसलुशीत जाळीदार हवी...
तेंव्हा आज बघु या स्वादिष्ट इडली कशी करायची..
साहित्य...
तांदूळ... तीन वाटी
उडीद डाळ... एक वाटी
पातळ पोहे... एक वाटी
मेथी ...1 टीस्पून
मीठ ...चार चमचे
तेल ...5 टी स्पून
इडली स्टँडला लावण्याकरता
कृती ...
*प्रथम तांदूळ व उडीद डाळ स्वच्छ धुऊन घ्या व पोहे घालून  पाच ते सहा तासाकरता भिजत घाला. मेथी दाणे पण त्यातच घाला.
*मिक्सरमधून रवाळ वाटून घ्या.
*हे मिश्रण सात ते आठ तास आंबायला ठेवा. 
*मिश्रण हे भज्याच्या पिठासारखे घट्ट हवे चमच्याने ओतता येईल इतपत पातळ असावे.
*पीठ आंबल्यावर त्याच्यात चार टीस्पून मीठ घालून मिश्रण छान फेटून घ्यावे.
*इडली पात्रात पाणी घालून  गरम करायला ठेवून द्यावे, इडलीपात्र नसेल तर आपण साध्या कुकरमध्येही इडली करु शकता फक्त प्रेशर म्हणजेच शिट्टी लाऊ नये.
*इडली स्टँडला तेल लावून प्रत्येक इडलीच्या साच्यात एक टेबल स्पून पीठ घालावे. 
*अशाप्रकारे इडली स्टँड कुकरमध्ये मध्यम आचेवर दहा मिनिटे वाफवून घ्यावे.
*दहा मिनिटानंतर झाकण बाजूला काढून सुरी घालून तपासून पाहावे ,सुरी कोरडी बाहेर आली म्हणजे आपल्या इडल्या झाल्या आहेत .
*पात्रातून साचा बाहेर काढून ,थोडे गार झाल्यावर सुरीच्या सहाय्याने  इडली काढून घ्या.
*मऊ लुसलुशीत इडली गरमा गरम सांबार व चटणी सोबत सर्व्ह करा.
*इडली गरजेपेक्षा जास्त वेळ जर वाफवली तर दगडासारख्या घट्ट होतात.
*उरलेल्या पिठाच्या पण अशाप्रकारे इडली करून घ्या.
