#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Dhokla is a snack item not only favourite of Gujarat, but throughout India.
Here is a quick version to satisfy your taste buds as well as to welcome your guests.
Ingrediants. ..
•Besan /Chickpea flour 1 Cup
1 Cup...200 ml
*Semolina...1 tablespoon... Optional
•Citric  Acid Crystals....1/2 tsp.
 I have used Eagle Brand  .
•Sugar  ...2 tsp
•Salt ..1/2 tsp
•Oil 2 tsp
•Eno/Fruit Salt 1/2 tsp
•Water. ...1 Cup
  For Tempering...
•Oil 1 tbspn
•Mustard seeds 1/2 tsp
•Asafoetida Powder...a big pinch
•Green Chillies ...6
•Grated Coconut and Coriander for Garnish
Method...
•Mix Chickpea flour/Besan, Semolina ... Citric Acid Crystals.... Sugar..n Salt properly.
•Slowly by adding water prepare the batter....add 2 tsp Oil... Mix.
•Preheat the big pan with a water on the  gas.
•Take another pan preferably Aluminium one, and 6" diameter.
•Grease it with Oil on all sides and bottom.
•Now in  the  Dhokla batter add Eno/ Fruit Salt...mix it quickly. ..it will become frothy.
•Pour this batter in the alredy greased  container.
•Keep the container in preheated steamer.
•Cook for 15 mts
•Remove from the gas.
•Let it cool for 5 mts
•Demould in a plate...cut into pieces .
•Heat 1 tbsp oil in a tadka pan...fry 5..6 Green Chillies with a slit...keep the fried Chillies aside. •Add 1/2 tsp Mustard seeds and a generous pinch of  Asafoetida Powder.
•Pour this tempering/ tadka on Dhokla.
•Garnish with chopped Coriander n Coconut. ..
Enjoy....
Note....If you want more thickness just double all the quantity and use 9" broad Pan for steaming Dhokla.

ढोकळा...लुसलुशीत जाळीदार ...त्याचा तो पिवळा रंग, त्यावर खमंग फोडणी, हिरवी कोथिंबीर, शुभ्र खोबरे...
वा पाहूनच भुक लागते.
आम्ही ढोकळा 2,3 प्रकारांनी करतो, आज त्यातील एक प्रकार पाहू या.
साहित्य...
बेसन... 1 वाटी
1 वाटी...200 मिली
रवा... 1 टेबलस्पून... ऐच्छिक
पाणी... 1 वाटी
तेल... 2 tsp
लिंबू सत्व किंवा citric acid... 1/2 tsp
मी eagle ब्रँडचे वापरले.
मीठ... 1/2 tsp
इनो फ्रुटसॉल्ट... 1/2 tsp
साखर 2 tsp
फोडणीचे साहित्य...
तेल 1 tbspn
मोहरी 1/2 tsp
हिरवी मिरची 6
हिंगपूड 1 मोठी चिमूट
कोथिंबीर व ओले/सुके खोबरे सजावटीसाठी
कृती...
बेसनात citric acid, साखर , रवा व मीठ घालून एकत्र करा.
2 tsp तेल व पाणी घालून हळूहळू एकत्र कालवा.
गुठळी होऊ देऊ नका.
एका मोठ्या भांड्यात पाणी गरम करायला ठेवा.
एका 6" aluminium च्या डब्यात चारी बाजूला तेल लावून घ्या.
भिजवलेल्या पिठात 1/2 tsp इनो घालून कालवा.
मिश्रण छान फसफसुन येईल.
लगेच तेल लावलेल्या डब्यात ओता.
हा डबा गरम पाण्याच्या भांड्यात 15 मिनिटे वाफवा.
बाहेर काढून गार झाल्यावर, एका प्लेटमध्ये हळूच उलटा करून ढोकळा काढून घ्या. हवा तसा कापून घ्या.
फोडणी साठी तेल तापवून, मिरच्यांना चिर देऊन तळून घ्या.
बाजूला ठेवून द्या.
उरलेल्या तेलात मोहरी व हिंग घालून फोडणी करा.
ढोकळ्यावर फोडणी घाला, कोथिंबीर व खोबरे घालून सर्व्ह करा.
टीप...जर तुम्हाला ढोकळा जास्त जाडीचा हवा असेल तर सगळे साहित्य दुप्पट प्रमाणात घेऊन 9" इंच व्यासाचे भांडे ढोकळा करण्यासाठी वापरा.

    1. हळद घालत नाही...बेसन घरी दळलेले असेल तर तसाच छान पिवळा रंग येतो...

  4. मी बनवला ढोकळा या रेसिपी प्रमाणे...मस्त झाला...पण हळद कधी घालायची असते ते मात्र मला माहित नाही

    Eno चालत नाही... म्हणजे सोडा पण चालणार नाही...मग अल्युमिनियम च्या भांड्यात न करता इडली साच्यात करावे लागेल...मग म‌उ होतो.
