Aluchi Vadi

#RenuRasoi  #Aluchi Vadi  #Steamed  #Colocasia #Leaf  #Snack Nowadays, during the monsoon season, very tender and small colocasia (arbi/taro) leaves are growing in my pot.  Since I had very little time today, I prepared this quick version of Aluchi Vadi.  It has the same delicious traditional taste but is much easier and faster to make. Ingredients (1 cup = 150 ml) *Washed & finely chopped colocasia (taro) leaves, – 2 cups *Tamarind – a lemon-sized piece *Gram flour (besan) – 1 cup *Rice flour – ½ cup *Red chilli powder – 3 teaspoons *Salt – 1½ teaspoons *Sugar – 1 teaspoon *Coriander powder – 3 teaspoons *Carom seeds (ajwain) – ¼ teaspoon *Turmeric powder – 1 teaspoon *White sesame seeds – 1 tablespoon Method 1. Clean the tamarind and soak it in 1/2 cup of water for 15–20 minutes. Extract the pulp and keep it aside. 2. In a large bowl, combine the chopped colocasia leaves, gram flour, rice flour, red chilli powder, salt, sugar, coriander powder, carom...

Mango Vadi

#RenuRasoi
#Mango #Vadi
This Mango Vadi is very soft and Luscious.... Delicious 😋😋😋
Not too Sweet but full of Mango flavour.... I have used Kesar Mango.
Very easy to prepare, with all easily available ingredients at home....
Ingredients...
*Mango Pulp...1 Cup
1cup...150 ml
*Sugar...1 Cup
*Chickpea flour...1/2 Cup
*Homemade Ghee... Melted...1/2 Cup
*Milk...1/2 Cup
*Dessicated Coconut...1/2 Cup
Method...
*In a thick bottom Pan mix all ingredients carefully.
*Put this Pan on a gas, flame should be low... keep stirring constantly.
*Else it will form into lumps and will stick to the bottom of the Pan.
*Within 15 minutes, it will form into a big lump, will release the ghee from the sides of the Pan.
*Remove immediately and pour into pre greased Plate. Spread evenly...
Let it cool and cut into pieces.
*Here I have moulded it into small Laddo because we want small portion to eat.
*Garnish with Cashews, or any dry fruits of your choice.
Note...
1. You can replace Dessicated Coconut with Dry Coconut available at home, or even Fresh Coconut.
2...You can increase Sugar as per your choice, but this proportion give sufficient Sweet taste.
3... I have added a pinch of saffron colour. But it's totally optional.

 * साखर ... 1 वाटी
 * बेसन ... 1/2 वाटी
 * साजूक तूप ... वितळवलेलं ... 1/2वाटी
 * दूध ... 1/2 वाटी
 * डेसिकेटेड खोबरे कीस ... 1/2 वाटी
