Since I had very little time today, I prepared this quick version of Aluchi Vadi. It has the same delicious traditional taste but is much easier and faster to make. Rajma Chawal is a very popular combination... carbohydrates and proteins...gives one a soulful satisfaction.
There are various methods of cooking Rajma.
Here's one in which we are using Onions and Tomatoes.
Both give a nice tangy flavour to Rajma. Here I have used small Kashmiri Rajma...
Ingredients...
*Rajma/Kidney beans... 1 Cup
*Onion ...2
*Tomato...3
*Oil ...2 tb sp
*Ginger ...1 tsp
*Garlic ...4 pods
*Salt ...1 tsp
*Sugar... 1/4 tsp
*Turmeric... 1/2 tsp
*Red Chilli Powder... 1 tsp
*Coriander Seeds Powder...1tsp *Garam Masala.... 1/4 tsp
*Cream... 1/2 Cup
*Mustard Seeds...1/2 tsp
*Cumin Seeds...1/4 tsp
Method. ..
*Soak Rajma for 7..8 hrs.
*Cook in a pressure cooker by adding water just to cover Rajma...also add Salt...cook till soft but not mushy.
*Make a paste of Onion, Ginger and Garlic..without adding Water.
*Also grind Tomatoes from the mixer.
*Heat Oil in a pan..add Mustard n Cumin seeds, after it splutters add Onion paste.
*Saute on low flame till Oil leaves the sides..add Termeric, Red Chilli Powder, Coriander Seeds Powder. *Mix properly, you can add 1/4 tsp Salt also.
*Add Tomatoes puree n cook on low flame till Oil separates.
*Add Rajma along with its water if any, cook for 3..4 mts...add Sugar and Garam Masala
*Mix properly ... switch off the gas. *In the end add 1/2 cup fresh cream or Ghar ki Malai.
Serve hot with Rice or Roti...

*Note...You can add 1 tsp Kasuri Methi. I have not used because it over powers other flavours.
